Mash Guidelines:
Strick temp +12 deg F = 164 deg F
Lager Notes:
Step 1) 53 deg F for 3 wks
Step 2) 70 deg F for 4 days
Step 3) 34 deg F for 4 wks
Ended up just a tad sweeter than the original.
Next brew I will drop the mash temp to 150 deg F. May increase the ABV a bit??? |

Notes: Start fermentation at 63. Check in 3 - 5 days. If the krausen has dropped and you feel like your past the peak fermentation, raise it up to 70 for a couple more days to get it done. Rack to secondary, have chocolate, vanilla and cinnamon in the secondary and rack ontop of it to ensure to "Stir it in". Keep it here for 2 - 3 weeks.
Add to barrel wait for ever - ENJOY.

Notes: ferment in the mid 60s if you want, higher temp will lead to banana esters and create a more banana bread weisen, but...i actually think the time i made this with the pale chocolate it was with the 380...more apricot notes. it was fantastic. fermented in the high 60s.

Notes: 1. Bring 3.5 gallons of water to 155 and steep grains for 30 minutes
2. Return slowly to a boil then remove from heat and stir in LME
3. Return to boil and add 1 oz Chinook
4. At 10 minutes add US Golding
5. Cool to <75
6. Dilute to approximately 5 gallons
7. Measure gravity
8. Oxygenate
9. Pitch Yeast
10. Leave in primary for 1 week
11. Move to secondary and leave for 1-2 additional weeks before bottling/kegging |

Notes: This is my first attempt at a black ipa. I am highlighting a new hop called Belma that has a moderately high aa and citrusy-melon aroma and flavor. I also added a half of an ounce of bitter orange at the last 5 minutes of the boil to add a little pizzazz. |
