copying this recipe to my recipe book, i think as a jumping off point to scaled up to a raison dextra clone. cannot seem to find any dextra clone recipes

To brew this Dogfish Head Raison D’Etre clone, mash grains at 152°F (67°C) for 60 minutes. Mash out at 158°F (70° C) for 10 minutes. Sparge and bring to a boil, adding hops at specified intervals.
Halfway through boil, remove two cups of wort from kettle and soak raisins for 10-20 minutes. Puree in a blender and add back to kettle 10 minutes from the end of the boil, along with the candi sugar. Shut off the boil and add aromatic hops.
Chill to 70°F (21°C), aerate or oxygenate well and pitch ale yeast slurry. Ferment at 70-75°F (21-24°C) until fermentation is complete. |

revisit 4 weeks later: pulled the keg out of the cooler and let sit for 4 weeks. yeast re activated and cleaned up the dyacityl. I should have roused the yeast cake during fermentation to clean up the dyacityl
maybe add 8oz Munich to get a little more orangey hew |

Decided to switch Wai-Iti hops to Cascade at last minute.
Did not check OG after adding honey. Was 1051 before adding honey. Did not weigh honey either. Looked like about 1/4 of a 24oz container, so 6oz seems reasonable. Beautiful straw color in sample. Mash temp may have climbed up to 156. Beginning to not trust my thermometer.
Decanted starter wort and pitched 500ml of 1272 slurry from 1L starter made 2 weeks ago. I lost count of what generation of 1272 this was. Time for a new culture after this beer.
Kegged and carbed. Hydro sample was initially off-putting to me. It took a week or so in the keg for the hop flavors to mesh, but when they did this beer ended up very nice. It is very similar to the Biggie NEIPA I did in December, but at session strength. No pineapple though. Other flavors and aroma similar. I think it was a mistake to sub in cascade. Would've been better with the wai iti as originally planned. Took the keg (along with two others) to a house party and about half of it was gone after, so I guess it was a hit. Have had rave reviews from my few IPA-drinking friends.
Will make this again and sub in HBC-438 for the Mosaic and Wai Iti for the cascade, if I can find it. Centennial if I can't. Overall, this was a decent session IPA. |

Notes: Brewed 4/17/16. Forgot that I have to use a 1.1 ratio on the mash with this much grain vs a 1.2 so I had to initially dump about 1/2gal early on. Strike water was about 172 and I cooled it down to about 155F. I ended up having to add about 1q of cold water to cool it down. I recirculated and I l believe I got it down to about 150F. Sparge went well with nothing that stuck. I killed the sparge and was sitting at about 4 brix with the runoff. The in kettle efficiency was 78% which was actually way higher than I thought. I am not sure why the efficiency is so high but maybe it is due to the excess sparge and boil? I did equal out at about 11gal thought. I believe I collected about 10.25gal from the kettle. This was one of the first times I tried 10gal so it was a good experiment. The first carboy is sitting at about 1.070 which is way higher than I expected and the second carboy is at 1.060 which was diluted with about 3/4 of a gallon of water. 1st carboy was sitting in the low 60s when temp balancing was finished and the 2nd was about 68F. |
