Notes: New method:
1.1 Mash as usual. I mash at 65c for an hour and sparge with 80c water.
1.2 Primary: Use Lallemand Philly Sour for fermentation.
1.3. Secondary 4-8 weeks: Add cloudberries that has been frozen and then pasteurised at 70c, then chilled.
1.4. Keg, drink & Enjoy
Old method:
2.1. Mash as usual. I mash at 65c for an hour and sparge with 80c water.
2.2. Let wort temp drop to around 40 - 45c.
2.3. Use actic or phosphoric acid to reach pH 4.5
2.4. Put wort in a clean and sanitised corny keg. Add lactobacillus.
2.5. Blow out any oxygen - important!
2.6. Keep for a couple of days and check pH. If possible, maintain 40-45c.
2.7. When pH is down to 3.6 - Add 5 liter water to be boiled away and boil as usual.
2.8. Goal is still 19 liters to fermentation.
2.9. Primary fermentation 1 week: add yeast and ferment as normal.
2.10. Secondary fermentation 4-8 weeks: Add cloudberries that has been frozen and then pasteurised at 70c, then chilled.

Aerate with oxygen then pitch yeast starter.
On Day 4 of fermentation, add first dry hop addition.
On Day 7 of fermentation, add second dry hop addition.
Once terminal gravity is reached (approx. 10 days), bottle or keg beer then carbonate. |

Notes: Not sure here on the amount of extract to add. I've read all kinds of recipes, seems like most people add 3-6 lbs extract in addition to the partial mash. I have here 4 lbs DME. I think it just depends on how high of a gravity we want.

Notes: I brewed this as an extract brew with great results and now converted it to all grain. I blew my OG as I over measured the batch sparge. Ended up with about 8 gal pre boil and missed my OG 1.042. I'll chalk this one up as a lesson and I'm sure it will drink fine. If anyone brew's this recipe, let me know how it goes.
