Notes: To make invert #1 sugar, combine 2 parts sugar and 1 part water (eg. 670g sugar and 330ml water) and heat to 100 °C for 15 mins. Then add c. 1/4 tspn citric acid and heat to 114°C for 5 mins. Allow to cool before transferring to jars. to make Invert Sugar #3, bake in an oven or air fryer on the "Bake" setting, if you have one, at 150°C for 1.5 hours. Alternatively, use pale Invert Syrup (available on Amazon) and bake for the same duration. If neither option is feasible, substitute with dextrose brewing sugar, or golden syrup and possibly add a few millilitres of Colour Carmel (E150c or d) if that's convenient. Check the baking section of your supermarket or buy a little Murphy & Sons Carmel colour if you plan to make a lot.

Notes: I'm not usually an APA/IPA guy, but hop forward beers are my wife's preference. I wanted to find an APA recipe that we could both enjoy that didn't require dry hopping.

I decreased the munich malt. I subbed Biscuit for victory (and decreased the amount based on comments I found that online that1-3% of biscuit was great, but it was easy to go overboard with it.

YEASTIONS...?
US-05 and WYEAST 1968: Jonathan from Baltibrew: split batch and fermented both at about 64F. The 1968 finished a little paler than the other. 1968 (like many British ale yeasts) accentuates malt character.
WYEAST 1272: Expect a soft, clean profile with hints of nut, and a slightly tart finish. Ferment at warmer temperatures to accentuate hop character with an increased fruitiness. Or, ferment cool for a clean, light citrus character. It attenuates well and is reliably flocculent, producing bright beer without filtration. |

*Cult of Saint Bartholomew is the 6th of 12 brew sessions in the Twelve Apostles beer line. Each of these 12 brews are American Amber Ales. Experimentation with water profile, temperature variations including mash temp., grain bill, ambient temp., hops varieties and yeast strains provide endless opportunity to learn about and improve this beer over the period of 1 year.
*American Amber(Red) Ale with a sharp bite of a lemon kick in the tail from hops.
*American 2-row pale ale malt, American Crystal 60L and Victory malt rounds out the grain bill.
*Magnum hops adds a balanced bitterness, homegrown whole leaf Cascade hops and Lemon Drops hops add distinctive grapefruit flavor and lemon - citrus aroma.
*Homegrown Cascade hops Alpha Acid has been age adjusted in this recipe since details of storage and pick date are a known variable.
*Mash temperatures in the range of 152°F to 156°F creating a wort with a nice balance of fermentable and non-fermentable sugars.
*White Labs California Ale WLP001 PurePitch Lot # 1025103 Manuf. April 13, 2016. QC cell count 3.36e9/ml slurry.

Notes: I brewed this one a year ago and let it bottle condition for 6 months. It was a great late summer beer and people really liked it.
The nuts are toasted at 325 degrees then diced. Added to the wort last 15 min in a grain sack. An incredible amount of oil leaches from the nuts. Used 2.5 pounds of Crystal for head retention. When poured the beer is mid brown with a healthy and long lasting beige head. Plenty of lacing in the glass. |
