Notes: If anyone is curious about this beer. The measurements for the grain bill are not accurate. This recipe is designed from my Irish Red called French Big Papi Imperial Irish Red. I rinse the mash grains again after making Big Papi. Until I make it I can only assume what I'm going to end up with so just to get an idea of the OG, this beer is a 3rd of the original grain bill. I changed the Hops and Yeast. I was drinking my Lil Papi Irish Red and it seemed to me that a raspberry amber would be delicious. The concept is turn your trash into stash. Since imperial beers leave behind so much converted sugars and have lower efficiencies, the next best thing to do is turn it into another beer. 2 beers for the price of one.. Enjoy!
The water absorption for the original grain bill is 2.7gal based on 0.15gal of water per 1 lb of grain absortion rate. That's a ballpark so I am removing 2.5gal from second rinse of the grain bed. |

Notes: Will sour with WL Plantarum, prob down to 3.3 or so. Lactic acid to 4.5 before pitching plantyboiz.
Whoops! Lac-dicked to 3.8/9. Oh well! Added a little lime to raise, but not much.
Hit somewhere between 3.2 and 3.3. 1.050 OG.
Dumped wort on top of Citra. Whoopsied, as temp was around 41.5 deg C. Voss prob loves that shit though..
It's going nuts - about 1-2 hours later.
Piffed 80gm Sabro in when was slowing down a bit ( 24hrs ).
It's fucking nice!! Oooh yeah! |

Acidulated malt removed. Water profile is RO. Adjust to your own water supply.
If step mash is not feasible on your system, mash at 150 degrees F (65 degrees C) for 1 hour. A single decoction may be used to raise the temperature from 145 degrees F to 158 degrees F if desired. |

Notes: A light and easy drinking lager inspired by the small Arkansas village where I was reared. A settlement of German, Swiss, and Polish coal mining immigrants Altus had a population of 418 back in the '80s. Being on the edge of a wet county, next to a dry county and home to 4 wineries and multiple other places to purchase alcoholic beverages. We loved our wine in Altus, but when taking a break from the grape, we chugged a light lager. The use of Talus hops has simply to do with the name; if you transpose the first two letters and you'll know.
Brewer's Notes:
*the mix of 2-row base malts is what I had on hand; will likely just use 6 lbs. of one type/brand in future brews
*If not using the WLP830 German Lager yeast, I will likely use Imperial G03 Dieter (Koln) Ale yeast fermented on the cool side of the recommended range and lagered |
