| Notes: Brewed on 6/19/16. Strike water was a bit high so decided to add a quart of cold before the grain and about a pint after. Mash tun was maxed out with that amount of water and grain. Mashed cooled down to about 148F. Couldn't get a clear runoff after recirculating so we shall see what that does. 75% efficiency in the kettle which might be a little low but we shall see. Dissolved sugar and syrup in about a pint of water. When all was said and done ended up with just about the right amount of beer and hit the OG on the mark. Pitching temp was about 68F but used extra ice to cool it more and got both down to about 65/66F. Beer had heated up to about 67F by morning of 6/20 and I cooled both down to 64F. Throughout the day I cooled periodically and in the evening it was sitting at about 65F. Morning of 6/21 brew was at about 67F and I cooled it. By the evening it was sitting at about 66/67F as well. 6/22 brew was sitting at about 66F in the morning so I cooled it and by evening it was around 66/67F. FG tested on 7/12, one was at 1.011 and the other at 1.012. I also biofined. |

Notes: Made starter the usual way - 1# DME 4300ml filtered water. Cooled to 75 and pitched. Activity slight but apparent - fermented for 1.5 days then into fridge at 50° for 2 days.
Started w/ 36 qts. of water so that we could get all the grain in. Strike temp 159 and we ended a hair high so we fit in 2 more qts. of water - Good System for big batches!!
30 min at 148, tasted Very Sweet. 15 minutes to stir and raise to 158 - held for 20 min. Stirred and raised to 168 over 20 minutes, held for 10 min.
Started sparge - first runnings were 1.078. Sparge water at 175-180. Had to tilt mash at the end to get everything out and that was a good idea - do that sooner! Ended sparge in the high teens gravity wise. Preboil gravity 1.070! Double checked - yup. Boiled off a ton - OG at 82 so we added 3.5 qt. to make it about 1.076.
Day was 105 outside so we could only get the wort down to 85 and into the fridge. Cooled to 50 over the course of 36 hours and pitched the yeast then. Good clean start and then we went on tour! Didn't take it out for 36 days!! Although the FG seems high it doesn't seem overly sweet to us, at least not now.
Carbonated it the next day when cold and am letting it sit hopefully until Nov. 1 - we'll see...
Made it!!! Tapped on Nov. 2 - clear from the first beer!! Can't remember when that's happened. On the sweet side of dopplebock but Very Good. Everyone seems to like it, including me! Lasted a long time and was clear, sweet and delicious to the end! Slightly better attenuation would be nice, but not mandatory. |

Notes: Fermented for 2 weeks and 4 days in carboy, bottle conditioned for two weeks afterwards. Found that keeping it in primary fermenter for 2 weeks and 4 or 5 days usually results in a clearer beer and a more golden colour rather than a dull yellow. This could probably also be achieved by adding a Whirlfloc tablet with 15 minutes remaining in boil, but we found it seems to taste better with the extra time in primary fermentation.
Alternately could add 2nd addition of hops with 5 minutes remaining in boil to achieve a BG/GU ratio of 0.49, which does not adhere strictly to the style but still has an IBU within the style's range.
Have tried several iterations, including one with Lutra Kveik instead of Wyeast-1098. Found that the Lutra resulted in a lemon aftertaste, a bit sour. Also tried White Labs WLP-002 English Ale Yeast, though this seems to produce a taste that is less enjoyable than Wyeast-1098. May try other British Ale yeasts, but Wyeast-1098 seems to produce the best taste discovered so far. |
