Notes: Steep the grains in the mid 150s for 45-60 minutes.
It is assuming a 5 gallon batch,
3 gallon - 60 minute boil, and adding the extract at the beginning.
If you can do a full boil you probably wouldn't need the extra 1oz.Citra at 60 minutes.

As far as First Wort Hop / Steeping hops.... I would add them with around 10 min left in steep (before rinse), and put them in a different bag than the grain. Then you can leave them in for the whole boil.

Notes: Before brewing, roast the oats on a cookie tray in the oven at 350 degrees for ~15 minutes or until browned and toasty.
Start with a sacrification rest of 110 for 20 minutes. Add oats and a few pounds of 2-row, bring to temp. After that 20m, add the rest of the grains and bring to 160 for a 60m rest.
REVISED: Add oats and 1lb of non-dark malt. Add a total of 8qt of water to bring to ~115. It helps to add 6Q, and then use the last two to adjust. Let rest for 20m.
Heat 24.7Q of water to 198F. Add to mash, and then add the rest of the malt.
Mash for 60.
Add nibs to secondary and leave for up to two weeks. Flavor will be mild.
This beer won gold in the 2013 Los Angles County Fair for Stouts, and bronze in the 2013 Ventura County Fair. |

Notes: made 2L starter at 1.020 for both yeasts, left overnight.
DME added in last 10 minutes, likely higher IBUs than the calculator thinks.
Belgian Saison got the overnight mash.
3724 starter smelled beery.
568 started smelled super fruity and delicious.
sampled 3724 after 2.5 days, SG at 1.022, beer tastes good, creamy, sweet, estery, maybe bubble gum or cotton candy? after 9 days, SG at 1.015, not nearly as bubble gummy as it was, TBH, it's a bit worse. after 3 weeks, gravity at 1.007, tastes good, reminds me of hennepin, smell has a bit of not entirely pleasing fermentation character.
sampled 568 after 5 days, refractometer says 6.2 brix, smells a little sulfury, not very good tasting. after 13 days, refractomter says 6.5. smell still maybe sulfury, tastes very good though, very rich in soft, fruity esters. finished at 1.008, some of the fruitiness is gone (should have served it asap?). |

Notes: Yeast starter, 38 billion cells (use Yeast Pitch Rate and Starter Calculator to estimate). Pitch yeast at 18 C and allow it to rise 3-4 degrees every day over the course of the next 3-4 days until you stabilize temperature around 32 C. If beer refuses to drop close to or below 1.008-1.010 within 2 weeks, pitch Wyeast 3711 French Saison yeast to finish out.
Hop bill: Add flameout (1 min) hop addition, take it off the heat, and let it rest for 20 minutes before starting cooling. Dry hop can be done either in one or two portions of 5 days each, with the same hop amount. Mash hops (Czech Saaz or German Tettnang/Hallertau) are added directly to the mash, or as first-wort hops, directly in the boil kettle while transferring from the lauter tun to the boil kettle, before beginning the boil. The latter option will give around 5 more IBUs, and whether or not to do it depends on if you want a slightly more bitter beer or not.
If you're feeling adventurous, you can take part of (or the whole) batch and add a New Zealand white wine during secondary fermentation, as an experiment. Let it ferment out and add priming sugar like normal. I think this will work well, but who knows? It's been done with great success at places like moderntimesbeer.com, so maybe worth a try.
