you can brew this just like the recipe and get a good high alcohol bitter IIpa or can cut it down a bit by omitting the corn sugar and change the 90 bitters to 60 reducing the bitterness a bunch, either way its fantastic. Dry hopping goes as follows first batch for 5 to 7 days then pull out and add the second batch for 4 to 5 days, I dry hop the second batch in my keg in a bag under co2, at the end of dry hopping I cold crash in the freezer to drop all particles to the bottom then pull the finished beer off the top and carbonate, you will love this beer
if you cant get WLP007 just use nottingham, works great at 60f for this beer |

Finish below 1.025 if you do not want it to be sweet. Ferment in the 60s for 4-5 days, and then let it go up into the 70s to finish. Pitch more yeast after 3 weeks if gravity is still high.
***Notes from my first brew of this recipe****
4 months in primary on yeast cake (no move to secondary, no problem)
FG was .014 - 85% attenuation from this strain (the first 21 days I let it get as warm as it wanted, at some points fermentation was so active the temp was over 84 degrees; spent the next 3 months in the mid-60's
Pitched dry bottling yeast and additional sugar to carb it, took about 3 weeks to finish
The aromas of this "young Quad" are very nice - plum, cherry and balanced yeast funkiness. It will only improve with age.
Updated tasting notes - home run for sure, the beer has rounded out with age and is delicious.
Tasting note at Nov '15 @ 16 months...beer has been cellaring around 60 and I just popped a bomber to take a taste. Needless to say I am happy with the product. Deep raisin and fig aroma with a chocolate maltiness and a strong alcohol bite.

Notes: Don't forget that the cherry bag is going to get into the fermenter so you need to leave a space for that.
Remove leaves and stems.
Give a good wash to the cherries (just water).
Put the cherries in a steeping bag and while your wort cooling put the bag inside (enter it around 65 C for 15 minutes (50C))
Put the bag out into sterilize vessel and wait til your wort cool down.
Mash and squeeze the cherries in your vessel.
Add the bag (with the juice) into the cooled wort again for fermentation.
Don't forget to get OG after you added your cherries because they contain a lot of sugars (still your actual OG is bigger by few 0.00X because there is still sugars inside the cherry that the wort not contain)

Notes: Based on a disappointing recent sample of Marble Ginger and a Twitter discussion with an ex-Marble brewer, I wanted to make something killer fiery so I doubled his recommended ginger additions.
Day 3 - Boil Honey with water and 5g dried ginger. Strained, cooled and add.
Day 5 - Rack to secondary, add fine sliced fresh ginger in bag, add some brandy to the dried ginger, stick it in a bag, add to secondary.
Priming sugar boiled with water and 5g dried ginger.
