Notes: Mashing Instructions:
Dough malt into 120 degree water. Pull 35% of grist and decoct. Decoction should rest 15 minutes at 147 degrees and boil for 20 minutes. Add decoct to main mash and let rest for 1 hour at 150 degrees. Raise temperature to 160 and mash out.

Extra Ingredients:
Invert and concentrate sugar the week before. Stir constantly and lower heat. Sugar will become thin caramel.

Water should be very hard; similar to Dortmund or Burton-on-trent. High level of Sulfates, Carbonates, and Salts

Yeast:
Wyeast 3787 and White Labs WLP 530 (both Westmalle Strains) should be added right away

Wyeast 1388 (Duvel) and White Labs 550 (Le Chouffe) should be added on day 3

Slurry from bottle of Westvleteren 8 added three weeks into fermentation when gravity falls below 1.025.

Fermentation started at 65 degrees. Temperature raised 2 degrees a day until it reached 85 degrees. Massive starters or starter beers used in all cases.

Notes: On brew day, prepare your ingredients; mill the grains, measure your hops, and prepare your water. This recipe uses reverse osmosis (RO) water. Add 1⁄4 tsp 10% phosphoric acid per 5 gallons (19 L) of brewing water, or until water measures pH 5.5 at room temperature. Add 3⁄4 tsp. calcium chloride (CaCl2) and 1⁄4 tsp. calcium sulfate (CaSO4) to the mash.

On brew day, mash in all the grains at 152 °F (67 °C) in 5 gallons (19 L) of water, and hold this temperature for 60 minutes. Raise the temperature by infusion or direct heating to 168 °F (76 °C) to mashout. Recirculate for 15 minutes. Fly sparge with 168 °F (76 °C) water until 6.5 gallons (25 L) of wort is collected.

Boil the wort for 75 minutes, adding the hops at times indicated in the recipe. The first wort hops are added to the kettle just before lautering begins. The 0 minute hops get added right after the heat is turned off. Stir the wort gently and allow to cool to 180 °F (82 °C) then add the hop stand hops. Allow to stand for 20 minutes then chill to 64 °F (18 °C) and rack to the fermenter.

Oxygenate, then pitch the yeast. Start fermentation at 64 °F (18 °C), allowing temperature to rise naturally as fermentation progresses. Mix the dry hops and divide into three equal portions. The first portion gets added after two days of active fermentation. The second portion gets added at the end of fermentation.

The third portion gets added three days after fermentation ends. Allow each dry hop addition to be in contact with the beer for two to three days, then remove.

Rack the beer, prime and bottle condition, or keg and force carbonate to 2.5 volumes. Do not filter or fine the beer.

Notes: This style depends on pitching a lot of healthy yeast cells. As with hops, however, the particular strain is not hugely important. What is important is that esters, aromatic alcohols and other flavor compounds associated with yeast’s respiration and reproduction phases are subdued. This can be accomplished by choosing a yeast strain that is known to be relatively “neutral” in flavor impact. It can also be accomplished by pitching a large volume of any ale strain and fermenting at a cooler-than-usual temperature.

Notes: Fell for the hype on Northern Brewer's website about "rare" South African hops. So I bought an 8oz bag of the best sounding one, African Queen.

Use 2nd gen 2017 WY1272 culture. Typical IPA water chemistry and mash schedule.

Brewed 6/11/17, stats as noted. Tweaked hop schedule to include FWH. Overshot mash temp to 156F. Discovered thermometer on pot is reading 4deg lower than old thermometer. Made "vitality starter" with 1L of wort taken after boiling batch for 10min, after FWH charge, before 60m charge. Used small mason jar of 2nd gen 1272; starter was krausening by the time I pitched it.

I was a bit underwhelmed by the aroma of the AQ hops. They are very similar in earthy, danky aroma to CTZ, so they should play well. There was a faint fruitiness in the aroma which must be the gooseberry as the descriptors indicate. Hydro sample didn't have much of hop flavor, and I can already tell the bitterness will come across as half or less of what the calc'd IBUs indicate. We'll see how well the hops carry through after dry hopping.

Update: kegged carbed and on tap as of 7/6/17. Its not bad. Ended up as a kind of generic IPA/PA. There is a firm, danky bitterness that balances the malt bill really well. If I concentrate, I can pick up a very subtle fruitiness that must be those gooseberries the packaging indicated. I really like the malt backbone on this one. The 1/2lb of crystal wheat was a very nice addition that brings a creamy subtle sweetness and some character and color to an otherwise generic malt bill. For whatever reason, this beer pairs exceptionally well with a fine cigar, particularly Macanudo Cafe series.

Overall this wasn't a bad beer. I think I just had higher expectations over the hyped up hops. I believe it would grade out well as a typical copper colored American IPA. I'll continue to enjoy it with the occasional cigar, and try to do a better job coaxing the flavors out of the remaining 3oz of African Queen hops I have in another IPA recipe with a few other varieties. I'm thinking Pac. Jade and Simcoe would be a good start.

Notes: Place pecans in an oven preheated to 275˚. Toast for 45 minutes, stirring every 15 minutes to ensure even cooking. When done, place nuts on a cooling rack covered with paper towels. Coarse chop them in a food processor and add them to the mash grains.

Mash grains using a single-step infusion at 154°. Ferment at 68°. Carbonate to 2.5 vol. CO2 and package.
