• WLP500 Monastery Ale Yeast - From one of the six Trappist breweries remaining in the world, this yeast produces the distinctive fruitiness and plum characteristics. An excellent yeast for high gravity beers, Belgian ales, dubbels and trippels.
• WLP540 Abbey IV Ale Yeast - This strain produces balanced fruit aroma and flavor characters.
• WLP550 Belgian Ale Yeast - Saisons, Belgian Ales, Belgian Reds, Belgian Browns, and White beers are just a few of the classic Belgian beer styles that can be created with this yeast strain. Phenolic and spicy flavors dominate the profile, with less fruitiness than WLP500.
• Wyeast Labs #3787 - TRAPPIST STYLE HIGH GRAVITY - A classic strain for brewing Belgian dubbel or Belgian tripel. This Abbey strain produces a nice balance of complex fruity esters and phenolics, making it desirable for use in other Belgian style ales as well. A flocculent, true top cropping yeast (additional headspace is recommended), that will work over a broad temperature range. This strain makes a great Belgian style “house” strain.
• Wyeast Labs #1762 - BELGIAN ABBEY STYLE ALE II - This strain has a relatively “clean profile” which allows a rich malt and distinctive ethanol character to shine. Delicate dried fruit esters can be produced when used at higher fermentation temperatures or in a high gravity wort.
• Wyeast Labs #3822-PC - BELGIAN DARK ALE - This unique Belgian ale yeast is a high acid producer with balanced ester and phenol production allowing a good expression of malt profile, especially the strong flavors of darker malts and sugars. High alcohol tolerance. Spicy, tart, and dry on the palate with a very complex finish. |

- Full immersion brew
Steps:
1.) Heat 9.5 gallons of water to 154°F (mash temp).
2.) Mash in all grains. Once they are mixed in, start a 60 min timer. Throughout the whole mash, keep the recirculating pump on and stir every 10 mins.
3.) After the mash, drain excess wort then bring to a boil.
4.) Once boiling, add 1oz Zamba hops and start a 60 min timer.
5.) With 50 mins left in the boil, add 1 lb lactose powder.
6.) With 15 mins left in the boil, add 1 lb Brewer's Crystals (slowly add these as to not scorch your machine).
7.) With 10 mins left in the boil, add 2 tbsp vanilla extract.
8.) After 60 min boil completes, chill to 180°F and add whirlpool hops. Whirlpool for 20 minutes.
9.) Chill the wort to 70-75°F and pitch yeast (be sure to use 2 packs of WLP066 or WLP067 since it is higher alcohol).
10.) After 2 days in the fermenter, add the 2 day dry hops.
11.) After another 5 days (7 days total), add the 7 day dry hops and 3x vanilla beans (cut beans open for maximal flavor).
12.) After another 7 days (2 weeks total), you can keg it up & enjoy!

6.75 lbs Flaked Oat (Quaker Old Fashion, half toasted at 350F for 25 minutes)
Might be a small smokey thing with this one since the burner under the mash kettle was going while the pump stop recirculating the wort. *sigh* Otherwise, very smooth brewday with minimal hassles 1 week on and the beer has been fermented at 65F with no problems. Pulled out of the fermentation fridge to put in the new beer. Still a big fluffy head on top.
My (Drew) portion definitely carried a smoky note to it. In order to combat it, I added 2 oz of French Oak cubes (soaked in Tequila for 6 months) directly to the keg in a hop sack for 1 week prior to serving. To add an extra bump a fresh extract of coriander (about 2 oz) and 20 drops of Red pepper extract and 20 drops of black pepper extract were added to the keg post carbonation. This part became known as "One Night in Tijuana" and was utterly destroyed at the 2012 Southern California Homebrewers Fest. |

| Notes: Pretty straight forward. The MRS wants an easy drinking brew for summer that's not too hoppy or too high on the ABV scale. Going to do this BIAB, so I'm not adding any rice hulls. Target mash temp is ~152. Cane sugar is just to dry this out and kick it up over the 3% range. SRM is just over the threshold of the style range. Last note...no water chemistry. I just use the Publix Spring Water. So yeah, it's whatever that is. |

Appearance; golden yellow. Darker than straw
Bright white thin cap of foam. Low carb
Aroma: Neutral. No hops (maybe 1% hint of spicy hop note). Something vaguely fruity (apple?)
Mouthfeel: medium, mid tongue tingle
Flavor: 50/50 low malt / low general hop. Hop spicyness lingers after the sip
Overall: Would be great on the beach on a hot day. Crushable
VB: very similar. Extremely similar. Maybe slightly crisper, slightly less malty/more bitter, slightly brighter lighter mouthfeel |
