Notes: Primary fermentation at 68-70 degrees for up to one week.
Rack to secondary, 40 degrees for 10 days, add gelatin for 3 days prior to bottling.
Rack into bottling bucket and bottle, or keg and pressurize to 2.3 vols.
This beer will be crystal clear, nice head retention and mouthfeel, and just a nice hot weather beer. |

Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 9˚C - 5 days to diacetyl rest at 18˚C.
Rack to secondary and lager for at least five weeks at (4. °C) or below.

measured pre-boil gravity after 4 days of souring at 1.042 or 1.043. Sweet wort tastes a little sour, definitely lots of cooked corn aroma, which I hope will boil off. Boiled for 90 mins.
After 8 days of fermentation, refractometer read 6.8 brix, which puts this at about 1.006. After chilling, the sample was moderately sour but very clean, not having much saison character. Apricot puree added after 8 days of fermentation.
3/14: sampled, apricot added a nice background note. added 1 pound of frozen mangos. |

Notes: need lacto bacillus blend for souring
add lactose toward end of boil
boil for 15 minutes, pre-acidify wort to 4-4.5pH with lactic or citric acid. WP for cold break settling, cool to 95 and transfer to fermenter and pitch lactobacillius blend. Allow to sit and hold above 75F (preferably at 95F) until a pH of 3.2-3.3 is reached then reboil for 15 minutes to denature the lacto then cool to 160F for whirlpool adds.
Need 1oz Chinese cassia bark in whirlpool for 5 minutes and dry hop for 5 days
ferment at 68F for 24hrs. Once activity is noticeable, bump to 70F for the remainder of the fermentation
add .25oz vanilla bean and 9lbs of pureed blackberries after fermentation is complete and allow to re-ferment the berries.
