Notes: We brew this with a full boil volume of 5 gallons of spring water
1. Bring 5 gal. of water to 155 - 160 degrees and then steep 1 lb. of crystal 10L malt and 1 lb of 2-row malt for 25 minutes.
2. Bring pot to a boil and then turn off heat and add 6 lb. of Extra Pale DME and 6 lb. of Amber LME. Stir constantly and once dissolved, return heat.

60 minute boil

1. Add 1 oz. of Mosaic hops (pellets) and 3.5 oz. of Centennial hops (pellets) at 60 minutes.
2. Add 1 oz. of Magnum hops (pellets) at 45 minutes.
3. Add 1 oz. of Citra hops (whole leaf) and 1 oz. of Cascade hops (whole leaf) at 15 minutes.
4. Once 60 minute has completed, remove from stove and cool wort to 70 - 75 degrees. Take a hydrometer reading. Your target OG should be 1.089. Experience tells us that about 1 gallon of liquid will burn off, so you OG might be 1.11. Add 1 gallon of spring water and you should reach your target OG.
5. Pour into primary fermentator.
6. Aerate/Stir the wort.
7. Add yeast starter or enough yeast vials to hit target of 404 billion cells. Target attenuation should be 75% before you siphon into secondary fermentation. Aim for 9 to 11 days in primary fermentation. Be very prepared for blowoffs!
8. Siphon into secondary fermentater for 8 to 10 days. Take another gravity reading.
9. After secondary is complete, you are ready for bottling. We are aiming for 1.6 vols of CO2, so we will add 1/4 cup of dme into a saucepan with 2 and 1/2 cups of water and bring to a boil. Let mixture cool and then pour into a bottling bucket.
10. Siphon beer from secondary fermentator into bottling bucket.
11. Pour into bottles.
12. Let bottles sit at room temp for 10 days. Next, move bottles into fridge and let them sit for 10 days.
13. Enjoy.

Coconut tincture:
Combined 8 ounces of shredded coconut and 750ml of rum and let it sit for 2 weeks. Strained off the shredded coconut and the liquid leftover was the tincture. Added the tincture to the keg to taste. |

Dry hop rouse and crash to zero. Keep hop contact time to less than 72 hours if possible.
Yeast: Lallemand Verdant IPA (not included)
Fermentation temperature/steps: pitch at 18 and let rise to 19 and hold. Free rise to 22 for D rest once gravity is at
about 1.030. The dry yeast version rages! Expect a massive krausen and potentially higher than anticipated
attenuation on generation 1.
With sharks we push Chloride up to around 230ppm, we leave Sulphate at base mains level (10ppm), we elevate
Sodium to around 50ppm. The Sodium Chloride is added to the boil and the Calcium Chloride to the mash. By doing
this we create a very soft mouthfeel but without elevating Calcium levels above 100ppm.
Other tips for success with a NEIPA would be to monitor you PH’s. Mash should be 5.2-5.3 at 20 degrees C. Pre-boil

Notes: Joe's Sierra Nevada Pale Ale clone.
-Heat up 13 gallons of water to 170*F.
-Initially pour two gallons of heated water into mashtun and add the crushed grain.
-add 5 more gallons of heated water carefully checking the temperature to ensure 150-160*F temperature. Stir grain bed really well to get an accurate temperature.
-Let Mash rest for 75 Mash minutes, periodically checking the temperature and stirring the mash.
-At 0 Mash minutes, begin sparging of wort. Ensure wort is clear of grains before allowing wort to fill in boiling kettle. Flow rate should be monitored. Entire wort volume should take ~ 40 minutes before boiling kettle is filled.
-keep mashtun from running dry as boiling kettle fills by adding the remaining 170*F water periodically.
-Bring Wort to a rolling boil, Boil for 60 minutes.
-Hops/additives additions:
*0.5 oz Magnum hops for 60 minutes
*1.0 oz Perle hops for 60 minutes
*1 whirfloc tablet or Irish moss added at 15 minutes.
*Wort chiller added at 15 minutes.
*2.0 oz Cascade hops for 15 minutes
*1.0 oz Cascade hops for 0 minutes
-Bring wort to room temperature using immersion coil/ wort chiller.
-transfer wort fermenters and aerate by vigorously mixing.
-sprinkle Safale US-05 and mix. Seal fermenters and set aside for 3-7 days or until airlock bubbles slow to 1-5 bubbles every 60 seconds.
-Move to secondary for 7 days.
*3.0 oz Cascade hops dryhopped for 4-7 days in secondary.
-Once the trub bed is settled and there is no airlock activity, the beer can be bottled or kegged.
Bottling will require you to boil a mixture of maltodextrin and water. Use priming calculator to determine amount of maltodextrin and water to boil.
If you are kegging your beer like myself, shoot for a volume of CO_2 Level of 2.6. Set regulator to 10.8-12 psi and kegerator temperature to 36-38*F. That should do it.
