Notes: Put in keg, tasted after 2 weeks at 12 psi. Great taste, the dark carmel grains and the the slight chocolate flavor really work well with the heavy citrus flavor from the hops. turned out great. the only problem i had was mine didn't ferment out all the way. stopped at 1.020, not sure what happened, tried to bring up the ferm temp hoping it would finish out, but it didn't. still tastes great. |

Notes: Make a porter,, add Ginger Snap spices at 10 minutes left of boil. (Actually the spice mix is 1/4 of the regular ginger snap spice ingredients list when making the cookie. Spice list is: 1/8 TSP salt, ginger, white pepper, dry mustard; 1/4 TSP ginger; 1/16 TSP clove. BE PRECISE.) Molasses goes in at 5 minutes. Chill, pitch yeast. Ferment three weeks, bottle and age for a few months. (Can drink in two weeks but ages very nicely.) |

Notes: This recipe is nearly the same recipe out of the John Palmer book - "Brewing Classic Styles".
Items I changed or added:
+Melanoidin malt - was not in original recipe
+Increased Honey Malt from 6oz to 8 oz
+Increased Bittering Hops from .75 oz to 1 oz
+The base malt was originally only British malt but I am a poor bastard and I didnt want to go that route so I split it up. It called for slightly more than a pound less than I have but wanted the gravity to be high and still be in style.
