Notes: Mash water boiled before use to reduce oxygen level.
Verify pH of mash tun, should be around 5.4, then add Ca(OH)2 (slaked lime) to wort just prior to late addition of specialty grains in mash tun (place in 5 x 15 inch muslin bags outside of malt pipe); Mash the late addition crushed grains for 30 minutes @ 66C prior to ending mash.
Primary fermentation 7 days, closed transfer to purged keg with spunding valve set to 15 psi for secondary fermentation 7 days, then age for ≥ 30 days at ambient before carbonation @ 32 F. Optional to carbonate then bottle and age at ambient.

| Notes: Freeze some red grapes, and and add to beer when poured into glass. The final gravity suggest that this should be a sweeter beer, with a bit higher abv. When enjoying the beer, biting into one of the grapes once thawed, should produce a bit of sourness, balancing the sweetness and bite of the higher abv. |

Original had 300gm of Munich, changed this to 300gm of Shepherds delight for more mid level flavour.
Mash temp at 65 for 20 mins then raised to 69 degrees worked well for mouthfeel.
Try a late addition of the dark malts this time so the Mash Ph doesn't drop to far. Get in seperate bags. This may also impact the flavour of the beer.
