Notes: Mashing Instructions:
“Simplified” Version of Cantillion Turbid Mash
Heat 6 gal of water to 140 degrees. Shoot for a strike temperature of 113F after doughing in. Rest for 10 minutes.
Add approx. 10 gal of boiling water over 5 minutes. Stir all the time. Stop when you reach 136F degrees. Your mash will be very soupy.
Remove 2 gal of soupy liquid from the mash tun and heat in a 2nd kettle to 176F degrees. Keep it there for now.
Add up to 12 more gallons of boiling water to main mash tun until it gets up to 150F degrees. It will be even soupier now. No rest needed here.
Transfer another 10 gallons from mash tun to 2nd kettle. Try and maintain temperature of 176F. The main mash will be resting at this time.
Add up to another 12 gallons of boiling water to bring mash tun to 162F degrees. Let it rest 15 minutes. It will be very thin.
Run off as much liquid as you can from mash tun into boil kettle and start boil.
Transfer enough liquid from the 2nd kettle to the mash tun to get to 167F degrees. Rest for another 15 minutes. Any remaining liquid in the 2nd kettle should be added to the boil kettle.
5 minutes into the rest in step 8, start recirculating the wort to “clarify” it. Sparge with 180 degree water until gravity falls to 1.005. You will be collecting more than 40 gallons.
Boil for somewhere from 2-4 hours until your gravity climbs up to at least 1.050.
Yeast:
Pitch with White Labs 570 (Golden Ale yeast). Fairly neutral for a Belgian. Ferment in the high 60's.
In 2 months, pitch Pediococcus Damnosus. Ferment in the 70's or 80's.
In 4 months, pitch Bret. Lambicus and Bret. Bruxellenis Ferment in the 70's or 80's/
Add fruit or additional wort if desired at 2 month mark. You can add to an oak barrel, but that barrel will never be available for any non-sour beer in the future.
Plan on aging a minimum of one year. Three years are better. |

Yeast is 50ml of Omega Voss Kveik, 100 ml each of Saflager 189 and S-23, made into working starter that was fermenting when pitched @ 7:00 PM 12-10-17
O.G. was 1.0526 after boil. 1.043 before boiling. Fermenting very well next morning, 12-11-17.

Notes: The clone attempt came out great, great balance of hop and malt. I took the listed ingredients on the bottle, and made an IPA out of those parts. I most likely didn't get their hop schedule correct, due to the huge difference in hop profile. Next attempt may include dry hopping rather than just using in boil or @ flame out.
Comparing to Black Raven's version: I received comments saying they preferred mine over the real Tricksters, giving attributes of a less bitter profile, less harsh and more crisp. |

Notes: I tried the partial mash done as suggested by Greenbush beer store - start the water boiling while steeping the grains. Once the boil was achieved in the grain, Turned off and covered until 1.5 gal water was boiling. Than added the 1/2 gal plus sparging water (1/2) gal to the wort. Only ran it through the grains 1x because I was already at the max I can boil. Next time I might do 2x sparging.
Transfer to 2ndary was 10/28. Taste was excellent. Final Gravity was 1.012, lower than expected. |

Additional Steps for this batch:
Night before:
- Crush 1/2 of roasted grains separately and cold steep in 3 gallons of filtered water (subtract this from water added to mash tun)
- Crush remaining grains separately into trash bag
- Fill HLT with filtered water
- Measure out water (less 3 gal) for mash tun
Day of (addl steps):
- At 5 min, draw off .5 gal of wort to stock pot. Add 8oz of Hershey's cocoa powder and boil for 5 min to break apart the powder
- Chill and split batch into standard robust porter and spiced robust porter (5.25gal into standard and 4.75gal into spiced)
Kegging:
- Draw 1L sample of spiced porter and use eyedropper full of hazelnut extract (into 100ml samples) until a balanced amount is reached. Scale up the optimal amount and add to full batch (remembering how much wort remains).
Bottle for Competition:
- Bottle 2 weeks before competition. |
