Notes: 1x Bewitched Amber Ale (30 IBUs),
2x Golden LME,
1x Amber LME,
2xTbsp (1oz) vanilla extract 48-hours before bottling.
Steep grains in 2-quarts of water at 155F for 30 minutes.
Rinse, drain, and discard.
Bring to a boil and add both packs of hops and boil for 20-minutes.
Remove from heat and add all the malt extracts and mix until incorporated.
Add 1-gallon cold water to the fermenter.
Add wort and top off with more cold water.
Check the temp and pitch your yeast.
Ferment for 3-weeks, add vanilla 48-hours before bottling.
Bottle condition for at least 3-weeks.

Notes: I`m primarily using Heather honey in my mead. At least 60/40 when I use a mix of Heather and Flower honey.
2 liter starter @1.04SG, 2 stage.
Filipendula ulmaria ( called Mead spice locally ) was traditionally used as "flavoring", and is this brews source of tannin. Caution; Filipendula ulmaria is a natural source of salicylic acid. Steep the Filipendula ulmaria in 1 liter of water so that it makes a strong, pungent tea. Add the tea to the fermentor the 3rd day.
Add commercially prepared Apple Must/ Apple Juice ( without preservatives like Potassium Sorbate, Ascorbic Acid is ok tho ) to the fermentor the 3rd day. The pectinase will help break down any pectin.
Leave to ferment for 30 days. Store for an additional year after botteling. Enjoy =)
End notes:
It was, to my best knowledge, uncommon to use hops in mead. Nor was it common to use any kind of malt. Hops, malt and Achillea millefolium ( a hops substitute, called Beer king locally ) was most commonly use for brewing beer ( beer was for every day use and mead for special occasions ).
You could add a small amount of clove, ginger and nutmeg to make the brew spiced as well ( I use these spices with restraint as I do not want my mead to taste like gingerbread ). Boil the spices for 15 minutes and let the Filipendula ulmaria flowers steep to make the tea.
Carbonation was also rare at best, and then only lightly ( due to lack of pressure proof containers ). |

## Steps
- Brew Day
- Bring 4lbs of sugar and 1 tbsp. Molasses and water to a boil for 15 minutes
- At Flame out, add yeast nutrient
- Once cooled to approx. 70 degrees F, pitch yeast
- After Fermentation
- Cold crash if you wish to clear the beer
- Transfer clear finished beer to keg or bottling bucket and add in 4 oz. of GNOME Root Beer extract
- Add 2lbs more of Cane Sugar to back sweeten (dissolve in 1 qt. of water)
- Add 2-4 tsp. of baking soda to taste
- Bottle or if kegging, aim for 2.4-2.7 volumes of CO2 |

Notes: 1. In a large brew pot, boil 3 gallons of water.
2. With the pot removed from the burner, add 2 lbs honey. Make sure to stir the water so the honey dissolves completely and doesn’t burn on the botttom of the pot. When the honey fully dissolved, return the pot to the burner.
3. As the liquid starts boiling again, add 1/2 0z Saaz pellet hops, boil for 15 minutes then add another ½ oz Saaz hops for another 15 min.
4. At the end of the boil, remove the pot from the burner and let cool to about 90 degrees fahrenheit. Add and dissolve the remaining 4 lbs of honey along with the juice of one lemon.
5. Add the must to a primary fermenter, aerate the heck out of it, and pitch the yeast.
6. Seal fermentor with airlock and store in a dark place at a temperature of about 70 degrees.
7. After 2 weeks, with a siphon, re-rack the mead into a sanitized 3 gallon carboy.
8. Add the remaining 1 oz of hops in a muslin bag to the secondary.
After 2 weeks, re-rack, then let age for 4 months (age through the summer).
9. Dissolve the corn sugar in 1 cup warm water and add to carboy.
10. Fill sanitized bottles and let age for another 2 weeks. |
