Notes: Grains
Heat 2 gallons of water to 162*F. Turn off heat, add grain bag. (Do Not add grains to water above 165*F.). Let temperature rest down to 152*F. and hold at 152-154*F. for 20 minutes, stirring grain bag gently from time to time.
Extract
With heat off add malt extract and candy sugar
Hops
Bring to a boil.
At boil add 2 oz. Tettnanger hops for 80 minutes
Add .25 oz Styrian Golding hops & .25 oz Hallertau hops for 35 minutes
Fermentation
Ferment 7-10 days at 68* -72*F. You can also go from primary to secondary after 6 days and leave in secondary 8 days.
Final specific gravity should be 1.012 - 1.014. |

Notes: 1. In a large brew pot, boil 3 gallons of water.
2. With the pot removed from the burner, add 2 lbs honey. Make sure to stir the water so the honey dissolves completely and doesn’t burn on the botttom of the pot. When the honey fully dissolved, return the pot to the burner.
3. As the liquid starts boiling again, add 1/2 0z Saaz pellet hops, boil for 15 minutes then add another ½ oz Saaz hops for another 15 min.
4. At the end of the boil, remove the pot from the burner and let cool to about 90 degrees fahrenheit. Add and dissolve the remaining 4 lbs of honey along with the juice of one lemon.
5. Add the must to a primary fermenter, aerate the heck out of it, and pitch the yeast.
6. Seal fermentor with airlock and store in a dark place at a temperature of about 70 degrees.
7. After 2 weeks, with a siphon, re-rack the mead into a sanitized 3 gallon carboy.
8. Add the remaining 1 oz of hops in a muslin bag to the secondary.
After 2 weeks, re-rack, then let age for 4 months (age through the summer).
9. Dissolve the corn sugar in 1 cup warm water and add to carboy.
10. Fill sanitized bottles and let age for another 2 weeks. |

Notes: 1. Steeping @155F in ~10L water, rinse with 4L of >170F water
- Rye for 45min
- others for 30min
2. Boil, full 5.5 gallon to start
- add LME
- add bittering hops 5mins after boil is re-achieved
- add chiller and spoon to wort with 15 mins left
3. Flameout
- chill down to ~180F
- Add "Whirlpool hops"
- attempt to hold temp for 30-45 mins, while ideally stirring a bit
4. Chill
- all the way down
5. Transfer to fermenter, check volume and top-off as needed. Take OG. Aerate.
6. Pitch yeast... no f-ing starter.
7. Dry hop, as indicated... or some amount of days TBD. |
