Notes: Good recipe for beginners.
Substitute hops: Cascade, Simcoe, Hallertau, Saaz.
If your water is low in mineral content, add 2 tsp of Calcium Chloride.
Steep the crushed grains in a grain bag for 45 minutes at 150F. Then boil for 60 minutes. Top off with cooled water.
Loosely based on The Brew Mentor's Easy Blonde, and a rusty memory of my first few extract batches that went well. |

It is assuming a 5 gallon batch,
3 gallon - 60 minute boil, and adding the extract at the beginning.
If you can do a full boil you probably wouldn't need the extra 1oz.Citra at 60 minutes.

As far as First Wort Hop / Steeping hops.... I would add them with around 10 min left in steep (before rinse), and put them in a different bag than the grain. Then you can leave them in for the whole boil.

Notes: Boil for 90 minutes to get some caramelization.
Rehydrate yeast in 5oz of water.
*About 16% of this recipe is munich malt*
Pitch yeast in half cup of 80 degree for 15 mins and leave alone, then gently stir for 15 until a cream is created.
Brewed on 06/27/15 with a full 5.75-6 gallons in the fermenter. I calculated about 7.25 on my dip stick, but after adding 4 lbs of extract it went up to 7.75, and thats why I did a late addition.
Gravity read 13.1 brix (1.051) Pitched at 66.
06/28/15: There is a TON of activity with some krausen getting pushed out. Everything looks good so far.
07/01/15: Changed temp from 66 to 68.
07/02/15: Took it out to room temp.
Kegged on 07/16/15:
Full 5 gallons. Might have sucked up a few oz of trub, but overall went ok.
Refractometer: 6.3brix (1.011 SeanTerrill) 5% Alcohol.
09/07/15: The beer has smoothed out a lot and it's quite nice. There is a strong buttery (not diacetyl) quality to the beer that I attribute to the munich malt. Overall my family likes it and I think it's good... but not great.

STRAIN: 1272 AMERICAN ALE II:
Ferment at warmer temperatures to accentuate hop character with an increased fruitiness. Or, ferment cool for a clean, light citrus character. It attenuates well and is reliably flocculent, producing bright beer without filtration.

Notes: Steps
Take yeast out of fridge 3 hours before pitching.
Bring the wort to 140 degrees, add 5g salt and 1g coriander, and then turn the heat off (heat for 5-15 minutes).
Transfer a portion of the wort to a starter flask.
Pitch WLP644 Trois when temp is at 70°.
Leave remaining wort in kettle.
Adjust PH ~4.2 to limit growth Clostridium butyricum and other potential off-flavor bacteria. Add 2 ml of lactic acid.
Chill the wort down to 95°.
Add 5 oz of Goodbelly Mango drink.
Cover with blankets.
Allow it to sour for 24 hours. No external heating is required.
Target PH: 3.6 - 3.8
After the souring phase, heat to kill the Lactobacillus before adding the WLP644 Trois for 5-15 minutes at 140 degrees.
Chill the Lactobacillus wort down to ~70°F and pitch WLP644 Trois.
After 2 weeks a stable gravity should be reached.
Rack or transfer off as normal to bottles or a keg.
Goodbelly: 8oz per 5 gallons = 1.6oz per gallon X 3 gallons = 4.8 oz (5 oz)
Salt: 0.5oz per gallon - 0.0625 per gallon X 3 gallons = 0.1875oz (5.315g)
Corriander: 1oz per gallon = 0.125 per gallon X 3 gallons = 0.375 (10g) - cut by 50% to 5g
Lactic acid: Using 1 mL of 88% lactic acid per .1 shift in pH for 5 gallons of wort is a good starting measurement. As an example, say that 5 gallons of wort has a pH of 5.0 just before pitching the Lactobacillus culture. Begin by adding 5 mL (1 US teaspoon) of food grade lactic acid to the wort for a target of ~4.4 pH. |

Notes: Toast flaked adjuncts in oven on 350 degrees until lightly roasted and the whole house smells of fresh baked bread. This will add another level of complexity to your beer and make for a superior Black IPA. Make sure you get Carafa 3 special because it is a dehusked grain that lowers any off flavers from the grain husks.
Steep grains at 150 to 160 degrees for 45 mins with just enough water to cover your grains then rinse grains with 1.5 gal of 170 degree water.
This was the first time I had brewed this recipe and it turned out to be my second favorite beer I have brewed and the best black IPA I have ever drank and I have drank many different black IPAs. I will brew this one again and again. Hope you do to. Cheers! |
