Ingredients:
2.5 gal Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.25 gallon recipe, you will need extra water because of the fluid loss during the boil process
1lb German Pilsner
.5lbs German Munich
6lbs Pilsen Malt Syrup
3oz Saaz Hops
2 Saflager S-23 Lager Yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Pilsen Malt Syrup and return wort to boil
Add 1oz Saaz hops and boil for 60 minutes
Add 1oz Saaz hops and boil for 30 minutes
Add 1oz Saaz hops and boil for 15 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.046
Add 2 packs Saflager S-23 Lager Yeast
Fermentation:
Primary – 2 weeks at 64-70 degrees
Secondary – 2 weeks at 50-54 degrees
Secondary – 2 weeks at 44-48 degrees
Bottling:
6 weeks after brew date
Use .25oz of corn sugar per gallon of beer
Condition beer for 4 weeks at room temperature

Notes: clean and drinkable but according to judges, is a little thin compared to style. Recommend adding an additional pound of DME and maybe a little carafoam to add body and mouthfeel. Many stout junkies at local home brew shop very much enjoyed this one, didn't recommend any changes unless I was to enter it in competition. |

Brewed in Plzen, Czechoslovakia, Pilsner Urquell is the original Pilsner beer. For the best results, brew this clone with soft water.
Ingredients
1.0 lb. (0.45 kg) Laaglander Light dried malt extract
3.75 lbs. (1.7 kg) Coopers Light liquid malt extract (late addition)
1.75 lbs. (0.79 kg) Pilsner malt
0.5 lbs. (0.23 kg) Vienna malt
0.25 lbs. Munich malt (10 °L)
0.5 lbs. (0.23 kg) CaraPils malt
8.75 AAU Cluster hops (60 mins) (1.3 oz./38 g of 6.5% alpha acids)
3.75 AAU Saaz (Zatek) hops (15 mins) (0.93 oz./27 g of 4% alpha acids)
0.75 oz. (21 g) Saaz (Zatek) hops (0 mins)
1 tsp Irish moss
Wyeast 2001 (Urquell Lager) or White Labs WLP800 (Pilsner) yeast (3 qt./3 L starter)
0.75 cup corn sugar (for priming)
Step by Step
In a large soup pot, heat 4.5 quarts (4.3 L) of water to 169 °F (76 °C). Add crushed grains to grain bag. Submerge bag and let grains steep around 158 °F (70 °C) for 45 minutes. While grains steep, begin heating 2.1 gallons (7.8 L) of water in your brewpot. When steep is over, remove 1.5 qts. (1.4 L) of water from brewpot and add to the "grain tea" in steeping pot. Place colander over brewpot and place steeping bag in it. Pour grain tea (with water added) through grain bag. This will strain out any solid bits of grain and rinse some sugar from the grains. Heat liquid in brewpot to a boil, then stir in dried malt extract, add first charge of hops and begin the 60 minute boil. Add other hop charges at times indicated. With 15 minutes left in boil, add Irish moss. Then turn off heat and stir in liquid malt extract. Stir well to dissolve extract, then resume heating. (Keep the boil clock running while you stir.) At the end of the boil, cool wort, transfer to fermenter and top up to 5 gallons (19 L) with water. Aerate wort and pitch yeast. Ferment at 70 °F (21 °C). Rack to secondary and lager for at least five weeks at 40 °F (4.4 °C) or below. |

Notes: Actual OG was 1.090. I used two packs of yeast to give it a healthy fermentation. Primary fermentation : 1 week so far, planning on 3/4 weeks. Then dry hop in the secondary for another 10 days. 2/15 racked to secondary for dry hop, SG was 1.021
Done done and done. Tastes amazing. Nice bone-white head. Full body and nice hoppiness that you would expect from a black IPA

Notes: Don't boil kiwis. Steep around 150 - 160 F, 180 F is too high. 20 minutes, maybe a few extra minutes as wort cools. Going into a cask to ferment, so can't leave kiwis in wort. Strain out with hops. Add pectic enzyme after beer has cooled (with yeast).

HOEGAARDEN WIT
5 Gallons; OG = 1.048; FG = 1.011; IBU = 16
Ingredients:
2 lbs. pale malt
2 lbs. malted wheat
1 lb. flaked wheat
1 lb. flaked oats
2 lbs. unhopped wheat dry malt extract (DME)
3 AAU East Kent Goldings hops (0.75 oz. at 4% alpha acid)
2 AAU Saaz hops (0.5 oz. at 4% alpha acid)
1/8 oz. lightly crushed coriander seed
1/4 oz. dried Curacao orange peel, shredded
1 cup unhopped light dry malt extract to prime
Step by Step:
Heat 9 quarts water to 163° F. Crush whole grains and add, with flaked grains as well, to liquor. Hold mash at 152° F for 90 minutes. Runoff and sparge with 12 quarts water at 170° F. Add DME, stir well, bring to a boil. Add East Kent Goldings hops, boil 45 minutes. Add Saaz hops, boil 15 minutes. Remove from heat, remove hops if possible. Add coriander and orange peel, steep 30 minutes.
Pour into fermenter along with enough pre-boiled and chilled water to make up 5.25 gallons. Cool to 70° F, pitch yeast. Ferment at 65° F for two weeks, rack to secondary and condition cooler (45° F) for three to four weeks. Prime with DME, bottle and age three to four weeks at 45° to 50° F. Serve at 40° F in a heavy glass tumbler.
All-grain option:
Replace the dried malt extract with another 1.5 lbs. each of pale malt and malted wheat. Increase mash water to 12 quarts and sparge water to 15 quarts. Mash time and temperatures will be the same. Proceed as above from boiling.
All-extract option:
Omit pale and wheat malts. Steep flaked wheat and oats in 3 gallons at 150° F for 30 minutes. Remove grains. Increase DME to 5 lbs., proceed as above from boiling. |
