ou will need:
2.5kg Liquid Light Malt Extract
1kg Liquid Wheat Malt Extract
1x Lager/Pilsner Grain Pack
20g EK Goldings Hops (4.2% AA) – 60 min boil
30g Cascade Hops (6.8% AA) – 15 min boil
30g Chinook (11.4% AA) & 30g Cascade (6.8% AA) Hops – 5 min boil
30g Cascade Hops (6.8% AA) – Dry Hop
Safale US-05, MJ M44 or WY1056 American Ale Yeast
Whirlfloc/Brewbrite* (Optional)
Procedure:
A day before, place 10-15 litres of water in closed containers in a fridge and chill.
Steep Lager/Pilsner Grain Pack for 20-30 mins with 1 litre of hot tap water (not boiling).
Strain liquid into a large saucepan. Rinse grain with another 1 Litre of hot tap water into the saucepan, and discard grain.
Add another 4 litres of water and 1 kg liquid wheat malt (approx.) to the saucepan, and bring to the boil whilst stirring.
Add 20g EK Goldings hops.
After boiling for 45 minutes, add 30g Cascade.
After boiling for 55 minutes, add 30g Chinook and 30g Cascade. Continue to boil for the last 5mins.
At the end of the 60 minutes, turn off the heat.
Add the rest of the malts and stir to dissolve. Place the saucepan in a sink of cool water for 10-15 minutes.
Pour the contents of the saucepan into the fermenter, and top up to 23 litres with chilled and tap water to reach a starting temperature of 18-20°C. Stir vigorously to aerate.
Add yeast and ferment as close as possible to 18°C**.
On Day 4 of fermentation, add Dry Hops of 30g Cascade to the fermenter. Bottle or keg when gravity is consistent over two days. |

Notes: For a twist on an oatmeal stout, substitute some of the 1lb of flaked oats with some packets of Quaker Maple 'n' Brown Sugar Oatmeal. Each packet contains approximately 1.625oz of oatmeal and sugar/flavoring. Adjust as desired for a total of 1lb of oats.
Steep the oats @ 115F for 15 minutes.
Steep rest of grains @ 155F for 45 minutes.
Bring to a boil, then remove from heat and slowly add the DME until dissolved.
Top off water for preboil volume of 6 gallons.
Bring back to a boil.
Boil for 60 minutes, adding hops as indicated, and add some whirlfloc or other fining at end of boil if you want to. This will end up dark, so finings aren't really necessary. |

Notes: The crushed carapils were steeped for 30 min. at 155 degrees. Sparge the grain with 1 quart of 170 degree water. Add water to bring volume in boil kettle to 3 gallons. Add malt extract and bring to a boil. Add bittering hops and boil for 60 min. At 30 min. add irish moss. Add finishing hops at last 2 min. of boil.
This wort was put into primary for 1 week and then cold crashed for 5 days. It was then racked to a secondary fermenter and 4.5 lbs of frozen blackberries were added. By freezing the berries before adding, more juice will be released into the beer. When the berries are frozen and the water volume in the fruit expands it breaks the skins. When they thaw more juice is released into the beer. You will want to cold crash your wort or use another method to floculate the yeast. Otherwise the fruit will ferment as well and create a winey taste. The beer will need to remain in secondary for around a week to get a good flavor. I left mine in for 7 days, but you can decide when there is enough blackberry flavor for your liking. Transfer to a clean fermenter and transfer to your keg. This beer is meant to be kegged because there is no longer enough active yeast to bottle condition.

I have not yet produced it but the numbers add up almost right on par with SN's Kellerweis.
The Brewery gives it's stats as...
4.8 ABV
15 IBU's
Using Perle or Sterling Hops.(I found with flavor profile and location of the brewery, it is perhaps the Perle U.S. hops)
Malt mentioned is a combination of Two-Row Pale, Wheat and Munich malt's.
If someone gets to it before I have a chance let me know how it turns out. I hope to make it in the next couple of weeks. |

Notes: Steep the grains in 2.5 gallons of water at 150º F for 30 minutes. Strain out the grains, add the wheat malt syrup and return to a boil. When the wort begins boiling, add East Kent Golding hops, Irish moss, and boil for 60 minutes. Add spices for the last 15 minutes of the boil.
Add Tettnanger and Hallertau hops for the last 2 minutes of the boil. Remove from heat and cool wort in ice bath or with wort chiller. Transfer to fermentation vessel (glass carboy). Add enough cold water to the wort to bring the volume up to 5.5 gallons. Pitch yeast and ferment at 50º to 55º F for 3 to 4 weeks. Prime, then bottle or keg. You should lager this beer for about 4 weeks prior to serving. |

* Start yeast slap pkg.
* Steep grains (crushed) at 150 degrees for 30 mins with 2 gal water. sparge with 1 gal 170 degree water.ferment pail.
In 3 gal water:
60 min *Boil fermentables and 1 oz Chinook hops.
15 min *Add Irish Moss
10 min *Add Yeast Nutriant
10 min *Add .5 oz East Kent Goldings hops.
5 min *Add .5 oz East Kent Goldings hops.
Add 3 gal cold water to ferment pail, allow to splash and aerate.
Cool wort to approx 90 F
Pitch yeast between 65-72 F.
Ferment for 10-14 days.
Bottling: Boil 2 cups water and 3/4 cup corn sugar for 10 minutes, cool and add to ferment pail, stir gently.
Bottle condition for at least 2 weeks between 65-75 F.

Bottled 1/2 then added Brewers Best Peanut butter flavoring to make a chocolate PB stout.
This is the best milk stout that I have ever tasted. Both the Chocolate and the Chocolate & Peanut Butter versions were loved by all that enjoy a good Porter/Stout. Could have improved the PB version with a little less Peanut Butter flavor (will only add 4 ounces/5 gallons in any future batches)
I had to take this one out of the rotation - only because I am lactose intolerant and even if I take a lactose digestive supplement i can't drink more than one without having issues. |
