Blackberries are in the form of juice after they have been run through a juicer. I started with 12lbs which I got 1 gallon of juice. This takes the seeds out of it which might add tannins. |

Dilute extract and steep with RO water.
Steep dark grains in 3 qt water at 168° during mini-mash. Combine worts in kettle, dilute extract to get to 4.5 gallons of wort. Add hops to combined worts to simulate FWH. |

Notes: Adding 3 oz citra & 3 oz mosaic immediately after 60 minute boil during cool down.
Made an 800 ml starter - 24 hours, cold crash for 3 hours, will decant and pour off top.
Added 2 gallons cold water, and immersion chiller. Will top off fermenter to close to 5 gallons to hit OG target.
OG was spot on - 1.070
Fermentation kicked in after about 6 hours |

Notes: Mix 4 gallons of spring water with 18lbs of honey. Add nutrients and yeast. ferment at 68F.
After fermentation, add crushed campden tablets and potassium sorbate to halt fermentation. Wait at least 24 hours then transfer to a secondary and back sweeten with honey to taste.
At this point you can bulk condition or bottle condition. I prefer to bulk condition for a few months then bottle condition for a few more.
It is a super easy recipe and makes a great final product. If you want a melomel you can simply back sweeten with the fruit or berries or your choice. |

Notes: NO SUGAR ADDED. SUGAR AMOUNTS CALCULATED FROM SOURING AGENTS AND CONCENTRATES ADDED TO BETTER ESTIMATE ABV.
Bring to boil for 5 minutes with NO HOPS. Chill and inoculate with goodbelly at 110F and hold temp until desired ph (3.4) is achieved. (<48hrs) Presoured with Lactic to 4.5pH.
Bring back to boil and brew as normal recipe demands.
Beets are cubed, coriander freshly ground in mortar n pestle. Both added by muslin bag and removed at time of pitching Goodbelly (Lacto. P.)

Notes: Steep grains in 4.5 cups water 40 minutes @152 degrees. "Sparge" in colander with 3.5 cups water @~168 degrees.
Add DME plus 8 cups water for hop boil. Add LME at around 2 minutes and bring entire wort back to boil before flame out.
Use 2 hop sacks. Boil additions go in first bag. Aroma/Flameout hops in second bag to leave in fermenter.
Ice bath to cool wort.
Add to fermenter on top of 1 gallon of cold water. Top up to 2.5 with cold water.
Pitch 5.5 grams of yeast at 65 if possible.
Ferment at 68-70 wort temp or lower if possible.
Iced during cold crash. Clearing? Added harvested yeast to priming bucket.
One week tasting shows great flavor, maybe slight oxidation. |
