Notes: Create a yeast starter with 1 C. orange juice, 1 tspn Yeast Nutrient, and Yeast in a mason jar. Let sit for 3-5 hours before brewing.
Crash the brew with 1/2 tspn per gallon of Potassium Sorbate after 7-10 days in fermentation, around when the OG reaches 1.020. Then, let sit for the rest of a full month to absorb the spices before racking to secondary. You can also pitch the spices in secondary instead, and rack immediately to secondary at 7 days.
On secondary, boil the the extra sugars for 15 minutes in a liter of water in a small sauce pot, siphoning off any nastiness. Pitch in, and give the mead a gentle stir for 30 seconds. This must be done *after* the Potassium Sorbate has been pitched and integrated well to crash the fermentation.
Be sparring with the orange juice. It tends to overwhelm the subtlety of the spices if too much is used, even by a half-cup. It adds a necessary acidic-sweetness to the mead to blend out the stark dryness of the spices against the earthy sweetness of the mead.
I tend to use a forest honey for a more mature vegetable sweetness, but summer bloom or clover works just as well.
Let sit on Secondary for 2-3 months. Continue to rack to desired clarity. Best if brewed in December and given at least 2 months to rest in a bottle. |

Notes: Inspired by a friend to use a vanilla cream ale base recipe, modified to extract, maintaining low ABV, low bitterness, high sweetness, moderate creaminess. Slightly darker beer for the style to bring out roasted notes. Not using butterscotch flavor, but using a butterfinger candybar, which will also darken.
Butterfinger:
1 King sized Butter Finger for a 5 gallon batch
2 cups water

Break the butter finger into small pieces, and bring 2 cups water to boil. Boil the butterfinger pieces for ~30-45 minutes. Rolling boil, not light boil. Drain through coffee filters. May need to poor some, sift, discard, repeat. Will probably lose a lot of water. Top off results with 1/2 cup water, boil an additional 15-30 minutes to sanitize. Add at flame out of hops schedule.

OG 1.040. Flaked barley did not add any gravity points as this calculator suggested it would. Not an unexpected result. Set PPG to 0 to correct calculations.
IBU will be higher than desired (though still to style) due to this and the late addition of the 3.5lbs of the extract. Would have preferred ~30. Should have cut aroma hops in half to 0.5oz to compensate. Didn't think about it.
SRM much lighter than anticipated, estimated about 20. More of caramel color then the soft black I associate with an Irish dry stout. The roasted barley I purchased listed a lovibond of 480-720 but even 480L plugged into the calculator yielded an SRM of 27 so I'd guess it was more in the 300L rang. I was hoping for roasted barley at 600L for an SRM around 32. If I do this recipe again I'll up the roasted barley to 20oz for color.
Pitched one packet of rehydrated Nottingham yeast into fermenter at 56f.
Temperature briefly touched 62f early in fermentation but only briefly and primarily stayed 58-60f.
Sampled 2/6/22. Attenuated to 1.009. Slight sulfur aroma. Roasty, almost oatey with a distinct lactic acid tang. Nicely dry. The flaked barley and acidulated malt feel like they're working together to make a creamy taste without the texture.
Sampled 2/9/2022. Attenuated to 1.008. Probably the end of the road. Sulfur smell almost completely dissipated. Very pleasant taste. Tastes of coffee and oatmeal with just a hint of cream and tart fruit.
Note: The color means I'm probably going to call this an Irish Dry Ale. The flavor and everything else is to style but I can't imagine calling something this light a stout.
