Notes: Belgian Candi a stand-in for 6lbs of bocheted honey; the different amount makes up for the greater sugar in the apple juice I used to reach the same OG.
Honey was bocheted on med/low heat over charcoal flame (grill) for ~1.5hrs, until very dark. Pasteurized apple juice (Kirkland brand) was used to dissolve the honey, and the mixture was added to the carboy with enough additional apple juice (5 gal total apple juice) to reach the final volume. Two packets of Nottingham yeast were re-hydrated in one small pack (~12g) GoFerm-PE, and pitched.
Fermaid O/K and DAP were added in staggered additions over the first week according to the schedule given by https://www.meadmakr.com/batch-buildr/: 4.5g Fermaid O @ 24 & 24 hrs, 5g Fermaid K & 2g DAP @ 72 hrs & 1/3 sugar break.
As my temperature controlled chamber was full, fermentation was carried out in a water bath/swamp cooler and further cooled with ice bricks. Over the course of active fermentation the temperature varied more widely than I would have liked, but stayed within 65f-80f.
Fermentation was visibly active during primary for ~2 weeks, and the must was racked to a secondary fermenter (onto 1/4 tsp of K-meta) after ~3.5 weeks. Secondary fermentation lasted a further 3 weeks during which Fermfast-Dualfine and Pectinase were used to further clear the must, though the Pectinase didn't seem to have any effect on a persistent haze and the Dualfine was particularly effective. At the end of secondary fermentation the must was cold crashed before being racked into a keg (onto a further 1/4 tsp of K-meta), carbonated, and bottled in 22oz longnecks.
The finished product is clear, the color of a bock or dark amber ale, and is very drinkable; while the bochet could have aged months longer, it still carries notes of dark stone fruit and toffee. |

Notes: Making the Must:

Pour the apple concentrate into a sanitized 6 to 8 gallon fermentor. Add 2lbs of honey and pectin enzyme to the juice, stirring well.
Primary Finish Gravity:
===================
When fermentation is complete, make sure it is done fermenting by checking it with a hydrometer; it should have finished down to 1.000 or lower.
Secondary / Additives:
===================
Transfer to secondary. Now add the stabilizer pack and stir vigorously for 2 minutes, this will help release any sulfur dioxide created during fermentation. Continue to stir twice a day for 2 minutes each time for 3 days.
Finings:
=======
Add the Isinglass Finings and stir gently for 20 seconds and let sit for 3-7 days or until your cider has cleared out.
Back Sweetening:
===============
Once it has cleared, transfer off sediment into a bottling bucket. Nor stir 2lbs of honey into the cider making sure it has dissolved, it will all dissolve you just need to keep stirring until it has dissolved completely. Now add the cherry concentrate, apple flavoring pack and stir gently until incorporated.

Notes: This recipe requires Iso-alpha concentrate which can be purchased from http://www.the-home-brew-shop.co.uk/acatalog/Isomerised-Hop-Extract-57ml-Isomerized.html. I'm not sure of the correct amount to use as mines came measured, but I made my brew with an IBU of 30. Also. all the hops in this recipe are in hop teabags which are added to the end of fermentation. The teabags can be purchased from Amazon or Ebay. Here's the recipe:
Bring 3 liters of water to a boil. Add Candi sugar and dissolve. Add spices in a musin cloth and boil for 10 minutes. Add this concoction, including spice bag to fermentation bucket. Add liquid malt to bucket and stir until evenly distributed. Top up bucket of fermenter to 23 liters. Add liquid Iso-alpha concentrate to wort. Oxygenate the wort by stirring it vigorously creating a foamy layer on top of wort. Pitch yeast on top of wort. No need to rehydrate yeast, but feel free if you like. I used two packs (20g total) of Mangrove Jacks M41 Belgian Ale yeast. Allow to fermentate at 74F for at least two weeks. Once fermenation is done and stable, boil 500ml of water and add to a bowl. Add all hop tea bags and let seep for 10 minutes. Add this hop tea, including tea bags to wort. Allow this tea to seep in fermentor for 5 days before bottling. Batch prime wort using 6.5oz of dextrose and bottle. Allow to further fermentate in bottles for 3-6 weeks or longer. |

Notes: Process:
Start the “ginger bug”: Add 2 teaspoons (10 milliliters) grated ginger (skin and all) and 2 teaspoons (10 milliliters) sugar to 1 cup (250 milliliters) of water. Stir well and leave in a warm spot, covered with cheesecloth to allow free circulation of air while keeping flies out. Add this amount of ginger and sugar every day or two and stir, until the bug starts bubbling, in 2 days to about a week.
Make the ginger beer any time after the bug becomes active. (If you wait more than a couple of days, keep feeding the bug fresh ginger and sugar every 2 days.) Boil 2 quarts (2 liters) of water. Add about 2 inches (5 centimeters) of gingerroot, grated, for a mild ginger flavor (up to 6 inches/15 centimeters for an intense ginger flavor) and 11/2 cups (375 milliliters) sugar. Boil this mixture for about 15 minutes. Cool.
Once the ginger-sugar-water mixture has cooled, strain the ginger out and add the juice of the lemons (or limes) and the strained ginger bug. (If you intend to make this process an ongoing rhythm, reserve a few tablespoons of the active bug as a starter and replenish it with additional water, grated ginger, and sugar.) Add enough water to make 1 gallon (4 liters).
Bottle in sealable bottles: Recycle plastic soda bottles with screw tops; rubber gasket “bail-top” bottles that Grolsch and some other premium beers use; sealable juice jugs; or capped beer bottles, as described in chapter 11. Leave bottles to ferment in a warm spot for about 2 weeks.
Cool before opening. When you open ginger beer, be prepared with a glass, since carbonation can be strong and force liquid rushing out of the bottle. |
