Notes: A day or two before brew day make a yeast starter if using a liquid strain. On brew day, dough-in with 20.4 quarts (19.3 L) of water, for a mash ratio of about 1.25 quarts per pound of grain. Target a mash temperature of 152 °F (67 °C) and hold for 60 minutes. Sparge with 170 °F (77 °C) water. Collect approximately 7 gallons (26.4 L) of wort runoff and bring to a boil, then add first hop addition. Boil for 90 minutes, adding hops at times indicated. At the end of the boil, add the final hop addition, then chill the wort to 64 °F (18 °C).
Pitch your yeast starter and ferment at 64–70 °F (18–21 °C). Following primary fermentation (about two weeks), dry hop for five days before bottling or transferring to keg. Prime to 2.3 volumes of CO2.

Step by Step
Spread the flaked oats out on a cookie sheet and toast them in the oven around 300 °F (149 °C) until they begin to slightly color up and give off a nutty oatmeal cookie character. Mill all of the grains together and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 154 °F (68 °C). Hold the mash at 154 °F (68 °C) until enzymatic conversion is complete. Infuse the mash with near-boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 5.9 gallons (22.3 L) and a gravity of 1.046 (11.5 °P).
The total wort boil time is 60 minutes. Add the hops once the wort reaches a full boil and then start your timer. Add Irish moss or other kettle finings with 15 minutes left in the boil.
Chill the wort to 68 °F (20 °C) and aerate thoroughly. The proper pitch rate is two packages of liquid yeast or 1 package of liquid yeast in a 2-liter starter. Ferment at 68 °F (20 °C). When fermentation is finished, carbonate the beer to approximately 2 to 2.5 volumes. |

Notes: Adjusted my first brown recipe just a little bit. I removed .46lb of special b. I lowered the amount of Crystal 60 and boosted the victory in hopes of adding additional nuttiness. I also added a slight bit of chocolate malt to give it just a hint of dark chocolate that should go well with the nuttiness.
I will split this 5 gallon batch to make 2.5 gallons of Northern Brown and 2.5 gallons of Christmas ale. For the Christmas ale I will add cherry, vanilla and possibly some cocoa nibs to the secondary. Sounds tasty.
Brew Day: 10/06/17
I ended up nailing my OG but had about a gallon left in the kettle after filling the carboy with 5 gallons. My efficiency was around 70% this time which is great. Mash temperature was very accurate (after an hour it had only fallen 1 degree ending at 153). |

Epic Brewing's Utah Sage Saison smells like traditional Thanksgiving dinner. The recipe starts with a balanced malt base of 2-Row, Marris Otter, Pilsner, Wheat, and Rye malt. “We add barley flakes for body and boil for our standard amount of time for most brews, 90 minutes,” says Epic Brewer Kim Collins in Denver, Colorado. “During the boil, we use high alpha acid hops that kick off lemony-citrus notes,” she continues. Five minutes before the end of the boil, fresh rosemary, thyme, and sage are added in a mesh bag. Finally, Utah Sage Saison is fermented with Belgian yeast, which brings a refreshing quality to this earthy saison. |
