Steps
1. Boil 2 Gallons of water

4. Bring to Boil again
5. Add Booster
6. Once dissolved, cool to 90 and transfer to fermenter
7. Once fermentation is complete, add Gelatin? for 3 days
8. Transfer to Keg and add flavoring

Notes: While the mash is... mashing, make an extraction from the roast barley by steeping in 1.5 quarts of water at 160F for half an hour. Add 1/4tsp each baking soda and chalk to steeping liquor. Strain and set aside. Add extract to last 5 mins of the boil. |

Notes: A good starting point is to keep keep the malt bill simple, mostly 2-row, with some light caramel malts and a little carapils. Putting hops into the mash is a must (mash-hopping). And the dry hop must contain copious amounts of Simcoe and Amarillo. Keep me updated! |

Não utilizei o liquidificado na ultima brassagem, somente amassados com um garfo e apesar dos problemas para escoar o mosto o resultado foi ótimo. Indicando que as ameixas influenciam pouco no aroma e sabor da cerveja.
A Cerveja ficou leve, muito fácil de beber leve maltado com aroma e sabor suave de frutas passas. Perfeito.

Notes: Heated Sparge Water to 190 degrees and then tempered Mash Tun for 15 minutes. Mashed In and temp dropped to 156 degrees and started 75 minute timer.
1.047 Preboil Gravity on roughly a 4.25 Gallon Boil.
1.061 OG on roughly 3 gallon Fermenter Volume and Yeast pitched at 70-72 degrees at 5:30pm on 10-30-16 (Sunday)
I changed Brew House Efficiency to match OG of 1.061.
Did not see Airlock Activity until Wednesday evening (Three Days Later)
On Saturday at 4:10pm the 5th I Dry Hopped with an ounce of Citra, 1/2 ounce Simcoe and an ounce of Mosaic after High Krausen.
I will let this Dry Hop until Wednesday the 9th. |

Notes: Batch size is a 5gal keg, fermeter liquid volume was 24L.
Base malt is Low Colour Maris Otter, I used Chit malt instead of Carafoam. I like oat bran instead of flakes, as it has more b-glucan. It was brewed raw, keeping the temp under 170F (75C) for the whole process. I added the second round of hops and lactose in the keg, as I found it fermented a bit too dry.

Brewing in Anvil 5.5 gal kettle.
-Hops & spices added to a hops bag to lessen the trub.
-Add 4 oz maltodextrin during last 10 minutes of boil with remaining hops & spices.
-Add Flavorings (Vanilla extract) prior to adding yeast for primary fermentation.
-Primary fermentation in the kettle or 3 Gallon BrewDemon for 14 days.
Optional: Rack to secondary fermenter for 14 days to add spices and to clear a bit. Racking should stir up those lazy yeasties.
For this batch I will use Mangrove Jack - Belgian Ale Yeast M41 (This yeast emulates the intensity and complexity of some of the best monastic breweries in Belgium, with spicy and phenolic tones. The high attenuation and alcohol tolerance of this strain allows you to brew a huge range of Belgian beers. Suitable for Belgian Strong Golden and Belgian Strong Dark Ales.)

Carbed to 3.3 and bottle conditioned 3-4 weeks
Very pale straw color. Nose has wonderful Belgian esters and phenols with a hint of malt. Taste is very good with slightly subdued esters and earthy phenols. Ferment at higher temperature if more fruity esters are desired. Carbonation is high and pretty much perfect. Overall a delicious, easy drinking beer. |

reason: adding Ca+2(calcium) lowers ph and aids enzyme activity. Adding SO4-2(sulfate) accentuates hop bitterness. Ideally I would add 1/4 tsp (1g) Calcium cloride, but I did not have any available on brew day. Cloride would accentuate maltiness. |
