HopMantis Brewing Co • 12/24/2019 at 08:33pm recipe for success? Stagger yeast pitches full of nutrient. Nutrient in the boil of course. Aerate before first pitch that also has nutrient. Pitch another yeast starter again in 2 days. Pitch another starter again in 2 days. Continue to do this until it dries out - each pitch should be loaded with nutrient and a pinch of sugar. The starter only need be 5 or so hours old - enough time for the yeast to acclimate to the environment. Back sweeten to desired sweetness and mouthfeel - I'd say about 2 plato, hit with metabisulfite then crash. Cheers, m8!
