Ok, so the beer is all carbed up and Chilled. I ended up using the zest and juice of 6 limes after reading this - > https://byo.com/stories/issue/item/1589-what-is-the-best-way-to-add-a-citrus-fruit-flavor-to-your-beer the BYO article that said to use 10 limes for a 5 gallon batch. This was a mistake.
First of all the beer is WAY too limey. I was hoping for "*beer with a hint of lime*" and ended up with "*lime flavor with a hint of beer*."
If I did it again, I'd go with the zest and juice of 3 *MAYBE* 4 limes if they're small.
Second of all the 1/2 lb of crystal 20 in the recipe is too much. I was going for just a slight hint of Malt character to balance the lime but it ended up being close to the color of an IPA! Not to mention that it's not as crisp as I was hoping for.
Using the WLP001 was one thing that definitely was the right choice. Because of the crazy active fermentation, it finished with 6.69%ABV and the higher alcohol at least helps cut at least a little of the residual Malt character, without tasting hot or phenolic. Such a great yeast.
If I were to brew this again, I'd probably just leave out all the crystal and go with a straight 50/50 - two row/wheat malt grain bill and only add the juice and zest of 3 limes at kegging.

först i med havregryn, tio min senare resten.
utan pump i en halvtimme låg på 62-63c.
mäskade i ca 90min inkl förmäsk.
allt gick bra, ingen stuckmash. kokade en minut med 22g columbus o protafloc.
Idiotpumpen vägrade samarbeta. prövade att blåsa, prövade att byta. om man bytte funkade det i tre liter innan det stannade av.
en viss vört gick förlorad, kanske en halvliter plus en halvliter vatten i vörten. fick ner till 55c, 21 liter. tillför 2 literkallt vatten för 23 liter.
OG: 1048 23 liter. pitcha jästen en matsked kl ca 18
på natten knappt märkbar aktivitet. en till matsked. tre timmar senare rock n roll. satte täcket över och 35c 100w 180 min. kom hem fem och megakreusen 37c och fruktig lukt. håller på 35c
morgon tors 24h från jäststart kreusen fallit för över till fermonstern. blev 21 liter. lämnade det mesta av trubben . ligger på 26c.
nästa dag fg 1008
Fre kallkrash m gelatin blev inte klart utan dis.
sönd flaskade med tratt och socker, gick sjukt snabbt. 40 o5or.,

två veckor senare, låg men ok kolsyra. typ 2-2,2.
lättdrucken öl, fruktig, all smak från jäst. bra munnkänsla, syrlig, låg beska men balanserad. En stark trea.
syrligheten är helt ok, smakar lite cider.

mäskade med 20 liter. lät ensymet verka i 20 min innan pump. fungerade med lågt tryck. mäskade i 90 min.

aktivitet i jäslåset en timme efter pitch på 35c.
(gjorde en starter med varmvatten från kranen och dme som jag höftade, började jäsa direkt. startern var full kreusen 4 timmar senare vid pitch.

vaknade av jäsningen, sprutade i vattenlåset.
nästa dag tis 1020. satte en ballong för att samla kolsyra.

tricket är att starta mäsken på 62-65 utan pump och röra då och då MED 800-1200 WATT
sön fg 1010 81 aattenuation kallkraschar m gelatin och citronsyra. verkligen fruktig jäst. tanken ä r torrhumling efter kallkrasch för att jästen tar med sig arom då den flocculerar. lotus o styrian wolf gav inte mycket.
blev klart supersnabbt i kylen, redan dagen efter. kanske för att jästen trivs varmt. torrhumlade med sabro o centennial en v efter bryggdag- mån
flaskade ons. 2g askorbin 160g asocker och ett g flaskjäst. väldigt klar öl i flaskorna
testade ens ons en vecka efter. en hit. ingen massiv humlearom men djäkligt välbalanserad, intressant tropiksmak parad med en svag karamell och perfekt beska, gillar verkligen crystal 60. blir inte "cloying sweet" mer subtil karamell. bra krämighet bra skumkrona, perfekt färg, mestadels klar. en svag metallisk smak jag tror kommer fr 25g chockladmalt, ingen felsmak mer intressant,
50g citra i dryhop för lukt och detta hade varit en femma. (se foto) |

Notes: 90 minute boil with hops, adjuncts and nutrients as needed. Chill to 64F. Oxygenate slowly through 0.05 micron diffusion for 90 seconds (we’re after 9-10 ppm O2). Ramp primary from 64F to 78F through 7 days. At 1.014 rack off primary yeast to secondary and cool to 55F. Hold for 5 days+ until the FG of 1.013 is reached. Dump yeast a second time, lower temp to 40F and hold for 6 weeks. Bottle using heavy Belgian bottles or Champagne bottles. Prime with 31g/gal Golden Candi Syrup and re-pitch 500ml Westvleteren strain stir-plate. Bottle re-ferment for 14 days at 76F. Cellar for 12 months. |
