Notes: I did a test this time (will call it that) everyone has been sick , me no exception, very tired and lazy so wasn't prepared and didn't make the needed starter. so decided to pitch 3 wlp090 yeast and hope for the best, didn't use my fermenter in water either just put in a room where the air temp was around 65 and of course had to shake it twice yeast just dropped to the bottom then after the second day took off bubbling about every 1/2 second for 3 days and still going but now at about 1 second, the smell out of the airlock is of hops and some yeast, I call that good lol
update, I guess dry hopping would be better after all the hop flavor while not bad doesn't jump out at me and make me want another and another, will be keg hopping this one!, after keg hopping with the hops cascade, amarillo and simicoe all mixed together, keg hopped this for 1 day in the keezer with a course bag in 1 keg. I took the keg and filtered it with a 1 micron filter because the hops flooded the beer, then I mixed the 2 together and wala a very very dry hoppy but good tasting beer, this beer is higher in alcohol than I anticipated, I will definably be brewing this again |

11/1/24: IMO this batch tastes superior to the OG.
Side by side comparison:
1) Appearance: a tad more orange color
2) Aroma: Identical
3) Mouthfeel: Identical
4) Taste: I prefer my recipe and execution, YEAST PREFERENCE?
5) Finish: my recipe and execution calls for kegging the batch vs the bottled OG so obviously, straight from the keg is smoother and the lacing may be a little more pronounced than OG. Which is a plus in my book.
I would love to hear the thoughts from those who try my recipe.

Notes: Changed from pilsner malt to 2 row. Hit 153 with the strike (172/173) to I had to temp adjust with a quart of cold water and then a quart of hot water. I got to 150. I conditioned the malt this time and put the rollers at the default setting. I conditioned with 1.5% of the weight and it seemed to turn out really well. Looked very pretty so we will see how the sparge and efficiency goes. I hit 5.17 pH taking a reading from the spout at about 10min. Maybe I don't need the acidulated malt? Predicted pH was 5.4. Sparge only slowed down a little bit but I also had rice hulls so that might have helped vs conditioning the malt. HBC342 was about 9 months old so I decided to DH with 2 öz of Citra |

Notes: A fairly close grain bill to authentic Irish stout... but I like chocolate so there you have it.
Named after my father's character of choice in the SCA, Lord Aegirjon of Cathanar.
1.5 starter used.
Fermented at 65F until FG is achieved... Normally takes 2 week or so.
Cacao in the secondary at 68F for 7 days or to taste...
Condition for 2 weeks minimum, and you shall have a fantastic chocolatey, creamy, dry Irish stout. |
