Notes: Home grown spontaneous Lacto
1c raw uncrushed 2-row add 1c 130F water, mason jar. Allowed to grow at room temp for aprox 1 week.
Split wort into 2 3G carboys and pitched this homemade Lacto (added a little water and sluried it around, pitched the solution) into one and added the WY5335 into the other. After a 3 day head start at about 90F, added dehydrated Safale 05 into each CB and allowed to finish. Racked after about a week, keeping each separate. Home made Lacto was much more sour. Bottled this and primed for 3.5v and after 3 weeks at room temp, first test was pretty much perfect. |

Hop level and crystal malt level are averages of the values in the the above recipes.
2% torrified wheat added for head retention only.
Wyeast 1968 (Fuller's ESB strain) chosen for its estery profile and malty finish. Fermentation temp 20 deg C for moderate ester production.
Brewed with London tap water. Half the volume boiled to reduce bicarbonate hardness. 2 grams gypsum added to raise sulphate level slightly.
This recipe is designed for brew-in-a-bag using a 19 litre stockpot. Efficiency worked out at 75% according to Brewersfriend and 80% according to Beer Engine. IBU level 33 according to Beer Engine, but true value likely to be slightly under this as brew-in-a-bag has lower utilization. |

Notes: Well this is a 'user upper' recipe seeing as I never got to repeat my original lovely tasting IPA thanks to a lack of ingredients/delivery.
1. Ferment out (check SG after a week)
2. Add 200g dry hop pellets
3. Leave for 10 days
4. Chill to 5°C for two days
5. Bottle
This is the plan anyway..... |

Notes: Was supposed to be a hoppy and very fruity American IPA - next time it will be if I double the hop bill - it ended up nice and fruity with quite low bitterness and very good maltiness. So a lot like Samuel Adams Boston Ale. |

Notes: Due to the honey in the Cider this could be considered a Cyser. Also, any Cider with a large ratio of honey needs to be aged 10 months or more; like Mead. This allows the "hot" alcohol flavor from the honey to dissipate. |
