Notes

Dissolve the sugar in 2 gals. of juice at low boil then reduce heat and add 3 gals. cider and 5 tsp. yeast nutrient and steep at 180 for 30 mins.
Let cool, put in bucket, airate and pitch yeast.
Ferment at 65 for 7 days then transfer to secondary for 7 more days.
