| Notes: Mash grains at 153° F for 60 minutes. Mash out and sparge at 168° F (76° C). Boil 90 minutes, adding bittering hop 60 minutes before flameout. Add Yeast Nutrient 5 minutes before flameout, and whirlpool 5 minutes. Chill wort to 63° F and ferment for 7 days, allowing temperature to free rise to 67° F and ferment to completion. Drop temperature to 55-59°for 2 days. Rack to secondary and add the Puree and French’s Yellow Mustard and swirl to mix but be careful not to oxygenate. Prime with 5 oz. (142 g) dextrose per 5 gallons (18.9 L) if bottling, or crash, keg, and force carbonate. |

| Notes: Mash grains in 7 Gallons x 90 min at 154F. At end of Mash add crushed Acid malt and stir and sparge off 13.5 gallons to ultra sanitary metal pot fermenter. Purge are space with Co2. Cool to 90 to 95F and pitch 16oz Goodbelly Mango probiotic drink. Flush again with Co2. Lacto ferment with heat belt at 90 to 95F for 48 to 120 hrs to sour. Boil as usual to 12 gallons. Note Add 5gm Yeast Neut and DME to boil for head retention. Cool to 68 to 70F and oxygenate well and pitch SA-5 to sacc ferment. Transfer to secondary over 8-10lb Frozen and thawed Raspberries. Package as usual. May want to add champagne yeast if bottling as it is acid resistant. |

1. Alkalinity to aim for - this is a pale beer so thinking of shooting for 20. Meaured alkalinity at 200, so
2. Ion balance. Chloride forfward, very few hops, so 1.8ml/L HCl
3. final pH needs to be 3.7, so pitch at pH4-3.9
mash pH fine at just oer 5.3
preboil 1036 27L - 94% eff
must have mismeasured, as finished post boil at 1036. 20L very clean in FV. c80% eff
after 4 days on second yeast it went from 1030 to 1012. Give it a few more days before bottling.

Notes: Target a mash pH of 5.43. Use a step mash with two decoctions, resting at 113°F (45°C) for 30 minutes, 125°F (52°C) for 20 minutes, 148°F (64°C) for 20 minutes, and a mash out at 170°F (77°C). OG Should be 1.032
Boil 90 minutes. Chill to 90°F (32°C). Pitch Goodbelly mango probiotic drink at 90°F (32°C) in boil kettle. Top headspace with CO2 and cover tightly.
Monitor pH every few hours, targeting a pH of 4.5 (after 48 hours, pH was 4.3).
Ramp temperature up to 190°F (88°C) and hold for 10 minutes to kill lactic acid bacteria.
Chill to 65°F (18°C). Pitch a very large starter of Wyeast 3711 French Saison yeast (diastaticus). Let rise to an ambient temp of 72°F (22°C).
Check gravity after 9 days: it should be at 1.012 with lots of acetaldehyde, which is typical of 3711 French Saison yeast. Pitch starter of Voss Kveik plus House bugs including Pediococcus, Lactobacillus, and Brettanomyces.
After 2 months aging in a stainless 5 gal. (18.9 L) keg, final pH should be 3.67, and final gravity 1.006.

The levels of hops vary throughout the range. We love hops, so all four beers are big, bitter badasses, but by tweaking the amount of each hop used later in the boil and during dry- hopping, we can balance the malty backbone with some unexpected flavours. Simcoe is used in the whirlpool for all four beers, and yet still lends different characters to each. Create balance through experimentation with the hop amounts and malt backbone.
