Vařil převážně Eda, všechno v pohodě, angřest výrazný a celkem kyselý, guava hezky tropická a šla by i pít samotná.
Nakonec 10.6°, prokvašení vypadá jen na 4.5°, takže nižší alkohol.
Vaření 2024:
Sypat do 63°
Vaříme cca 9.5°, ovoce pak přidá dohromady 1.3°, legislativně asi 9?
40kg dát do hlavního kvašení (20kg malin+20kg angrešt), 120kg pak před zahrazením (nebo po 5-6dnech). Hradit okolo 4-5°, ovoce přidá cca 1°, takže by to mělo být akorát.
Vodu upravuju na Cl/SO4 cca 1:1 (65:65), chtěl jsem snižovat trochu pH, ale nejsou to sacharomyces, takže ani nevím, jestli pro ně to nižší pH při zakvášení je benefit, tak to nechám, jak to je.
Kvasnice pustit klidně až ke 28° C, zakvášet na 25°C (normálně asi stačí okolo 23°, nicméně mám lehce prošlý kvasnice, tak vyšší teplota bude pro ně lepší, abych neměl underpitch)
Tlak na 1.2 bar, budu ochutnávat, možná budeme muset pak dosytit pomocí CO2, s tou hromadou ovoce si to bere sycení výrazně méně než normálně.
Vaření 2022:
Vše šlo celkem dle plánu, jen vyšla nižší výtěžnost, musel jsem snížit klasických 80% na 75%, aby to sedělo (prý se dost nevyzpytatelně chová vždycky pšenice, kde někdy dá minimum a někdy zase hodně, dneska teda asi minimum).
630l 9,7°P nakonec celkově, ovoce přidá 0.5°, takže 10.2° celkově, uvádět budu 10°
Zakvašeno při 21° 500g balením kvasnic na 660l.
Za prvních 5 dní teplota stoupla jen o 0,5-1°, prokvašení z 10.2° na 8.2°P, což byla si ta fáze vytváření kyseliny mléčný, 6 den začala teplota stoupat.
Pak to zase jelo docela rychle, vystoupala teplota o 4° a plato po dnech fičelo dolů 8.2° -> 4.5° -> 2.8° -> zahrazeno po 8 dnech, pomalu snižování teploty, i po 13dnech si to ještě trochu bublá při 5°C.
Málo nasycené a to jsme to na poslední dny zvedali tlak z 0,8 na 1,0. Při příštím vaření držet celou dobu na 1-1,2 BARu, spíš asi 1.2
Přetažení do velkýho tanku vyřešilo mojí obavu, že půlka sudů bude hodně ovocná a druhá ne, nicméně to není standard, potřebovali tank, tak to přetáhli. Nakonec možná i kvůli tomu vyšlo čistýho piva jen 530l.
Hned po stočení to ještě bylo trochu kvasnicový, řekl bych, že ty chutě se ustálily až tak po dalších 2 týdnech a i tak je tam takový drobný nádech těch kvasnic, takový specifický. V chuti hlavně mango, maracuja jen trochu (později mi přijde zase opačně, ač maracuji málo, tak je docela výrazná), nicméně kyselost akorát, ovocné mi to taky přijde fajn, jen to nasycení je na hovno, celou dobu se to chová jak sud, co dochází a říz to má nížší, ale tak hrozný mi to zase nepřijde, spíš na čepování a dělání pěny je to blbý. Každopádně příště zrát při min. 1-1,2bar. |
