| Notes: Excellent cream ale. Keep the corn or rice at or under 10% too much corn gives a weird twang. With us 05 I always rehydrate. I take some of the extra wort from the mash, balance it to 1.035. boil, chill, and rehydrate the yeast, if you don't you get some weird pear like esters. I've tried 001 and 1056 both were clean but not dry enough. K97 kolsch yeast was great. Taken straight from the winners section of the aha website. |

Notes: Nov 23 brew notes:
- Decided to place in wort bag, and choose yeast in the morning depending on whether ferm chamber is clear or not (US-05, Saflager or Voss Kveik).
- mash temp went as low as 144f, jacked the heat once to bring up to 146f.
- did a mini step mash, turned propane to high with 5min left in boil, mashed out close to 160f.
- brew day about 2hrs5min. Will pitch tonight or tmrw.
- OG: 1.048
- pitched yeast on Nov 25 at 75f. Use Saflager 34/70. Put in basement in closet and set temp to 59f. |

Notes: V1 used Mangrove Jacks M54 California Lager yeast which finished a bit dryer and lighter than a true Nail VPA. This yeast is quite similar to WLP810 San Francisco Lager Yeast but I couldn't get any at the time of brewing. I've brewed twice with this recipe and although I'm happy with the beer I wanted to try out a different yeast. I've seen other clone recipes which use similar hops but different yeast.
Version 2 was made with White Labs WLP 001 California Ale Yeast and is currently dry hopping (28/5/20). No other changes. Tasting notes TBC.
10-6-20 Much better with the wlp001, very close to the original. Same colour but hazier, perfect white head with solid retention, passion fruit aroma, crisp mouth feel, finishes clean and refreshing. Very sessionable for 6.5% just liek the real deal.
I may increase the dry hop quantities by 10-20% for version 3 otherwise change nothing. Solid recipe. |
