Notes: ## PRIOR to BREW DAY
- Attach torpedo buoy with filter attachment to *fermentation* keg

- Fill serving keg 99.99% full with Starsan (tip and inject Starsan
until water escapes from gas QD)
- Use CO2 to push all the Starsan from the serving keg into *fermentation* keg
- Pre-measure mash salts
##Yeast Starter
- None. Use dry yeast (2 packets)
##MASH
- Hochkurz Mash
- Add mash salts to empty MLT
- Fill HLT with 8-9 gallons of strike water and heat to strike temp of 160 degrees (F)
- Transfer 5.8 gallons of strike water to MLT, then CLOSE MASH TUN VALVE (to ensure no mash water goes back to HLT)
- add remaining sparge water to HLT and set temp to 145 degrees
- Dough in and stir
- Begin recirc when HLT is at temp
##BOIL
- Boil timer settings: nE = 4, t1=90, t2=60, t3=25, t4=10
- Use stainless hop spider to contain hop residue
- When there are 25 minutes left in the boil, rehydrate the Irish moss with just enough RO water to cover it)
- When keg is around 1/3 full, add Fermcap-S drops (don't add yeast yet)
- Put sanitized tilt hydrometer into fermenter
- Fill keg to just above the weld (max), securely attach lid, add a few psi of pressure using CO2
##FERMENTATION
- Cool wort to 60 degrees (F)
- Sprinkle yeast directly onto wort (no need to oxygenate when using dry yeast)
- Pressure ferment starting at 62 degrees (F) at 27 psi (with spunding valve) and ramp to 72 degrees over 10 days

SP0=62, dh0=240
SP1=72, dh1=96
SP2=72, dh2=168

##PACKAGING
- Slowly ramp down temp to 33 degrees over 7 days
- Prepare and 'inject' Gelatin (without any oxygen) into the serving keg
- Pressurize serving keg to 12 psi
- Do a closed/pressurized transfer to serving keg (to get beer off yeast)
- Hold serving keg at 33 degrees for a week or more
- After cold conditioning, set keezer pressure to 12 psi of CO2
-Target = 2.3 volumes of CO2 at 43 degrees (F)

London Ale III 1318 (1.6L starter 24 hours before and pitch right off stir plate w/ no decant)

2lbs- flaked oats

1lb- Lactose (last 5 min of boil)
.5lbs- honey malt
.5lbs- crystal 10
6oz of citra, 6oz of denali, 6oz of Eldorado, 6oz of galaxy.
4ozs of each hop for a 30 minute hop stand at 180 degrees and let the temp free fall
2.02:1 chloride(17 grams) to sulfate(7grams) ratio also 3ml of lactic acid (all added to mash)
24 hours in to fermentation add 1oz of each hop.
3 vanilla beans spit, scraped, chopped, and soaked in vodka for a week.
4lbs strawberries and 2lbs peaches. (both frozen not fresh with no special treatment)
Once FG is reached and stays the same for 2 days I put the fruit (blended), vanilla bean tincture(dump all in), and 1oz of each hop in secondary (rec putting the vanilla bean tincture in first, then hops, then fruit, it seems to hold the hops down a little longer and keeps them from getting pushed to the surface) and rack beer on top through closed transfer. Let secondary sit for 5-7 days then cold crash for 48 hours. Then rack to keg through closed transfer. I carb mine at around 2.4vols of Co2.
I didn't post water amounts because everyone's system is different, so your chloride to sulfate grams might be a little different. You want to shoot for around 200ppm:100ppm

Notes: This is a rebrew of a beer that went quick (as in one night) a couple years back. I hope it turns out just as well.
The second dry hop addition will go in the keg.
5 gallons made it into a keg and I had enough left for 4 bottles. The bottles cleared nicely(I used 1 clear bottle so I could see what was going on) the keg seems to be staying hazy and delicious. The hop character of the first pour is amazing. It lacks some bitterness from what I remember from the first time... I am going to sum that up to improved cooling since getting a counterflow chiller. I will up the 60 minute addition next time I brew this for me... for most people, just fine as is. A hazy hop bomb IPA!
