Notes: Starter from 1 pack (100B cells):
1. Add water to 120g DME, bring to 1.75L total.
2. Boil 10-15 min.
3. Put lid on and remove from heat.
4. Chill the wort (place pot in cold water or wait for temp to drop)
5. When the wort is at room temp, pour into a flask. Do not strain/filter.
6. Cover the flask with sanitized foil and shake to aerate.
7. Sanitize the exterior of the yeast package and pour the liquid into the flask.
8. Swirl gently to incorporate the yeast.
9. Replace foil and place the flask at room temp, out of direct sunlight.
Depending on the yeast in the pack, total propagation time should be 24-48hours.
It is possible to chill the starter overnight in the fridge to settle all the yeast.
The starter "beer" can be poured off so only the yeast slurry will be pitched.

Notes: Ferment at 68 F (20 C) with no added pressure for the first 7 days or whenever primary fermentation is done, soft crash to 60 F (15 C), dump yeast after 24 hours, and add dry hops, allowing 5 days of contact time while spunding to 10-15 PSI (.67-1 bar). Cold crash to drop hop debris and package with closed pressure transfer. |

Grains treated with 2% by weight water with 25 ppm Sodium Meta Bisulfite, just before grinding.
Mash water boiled before use to reduce oxygen level. Sodium Meta Bisulfite (Campden tabs) added as powder @ 50 ppm to prevent Hot Side Oxidation (will add 11.6 ppm Na+ and 40.5 ppm SO3- aq to water profile)
Add 5 drops Fermcap S prior to boil to prevent boil over
Make a 2 L starter. |

Start with 50L and boil down for 30mins-60Mins, see what we get in reduction. then add some more wort if need to estimate 45L target.
Notes:
Next time start with 60L, we ended up a lot lower than expected. Keep time consistent and keep a backup amount of wort.
Added 2g of citric. PH was much higher than expected. |
