This beer finished at 1.026 due to the
unfermentables and high mash temp.
Too chocolatey, so I decreased cocoa from 6 oz to 3 oz. |

Notes: This is the largest all grain mashing I have done to date. Almost 22 lbs of grain almost filled to capacity the mash tun. When the hot water was added I discovered pretty much the capacity of the cooler (22lbs) After 60 minutes and periodic checks to see the temperature stayed around 155, the concoction was drained, sparged, boiled for 60 minutes, adding hops and spices and lactose according to schedule. 6 gallon fermenting bucket was sanitized, filled and yeast was pitched around 6pm on 11/2/2014.
The grains were left in the mash tun for a small beer that followed approximately 15 minutes after the "Hazel's" wort was removed and sparged.
After 12 hours the bucket has not started to bubble. Moved bucket to kitchen counter.
Transferred to carboy after 1 week. Left for 10 additional days. Tranfered to the bottling bucket on the 19th and bottled 4 gallons of Aunt Hazel with final gravity at 1.023.

- Pitch berries into fermentor after a few days and leave there for a couple of weeks.
- It might be a good idea, a few days before bottling, to rack into a new fermentor. Then leave the beer to settle for a few days before bottling. |

6-4-2021 -- Dropped one pound of 2 row and droped 60l to .5 lb to get to under 5%. Also dropped the sparge. Changed up the hops dropped the oz of Spalt at 60 mins Dropped .4oz hersbruker at 10 and 5 mins, and dropped the hersbruker .5oz dryhop.
1-26-22 The beer got reviewed by the Brew Dudes https://www.youtube.com/watch?v=XdFoHJEfv1o With that said going to bring back some hops and change out the water profile. Bumped the Gypsum from 3g to 7g. to get away from the balanced profile and try and make the hops pop a bit. With the hops I added another .5oz of tettnanger at 60 mins and added another .5oz tettnanger to the dry hop.
1-29-22. Ended up using Harvest as no more 34/70 at the shop. |

Tried to get by with 4 oz rice hulls. Sparge stuck at very end. Definitely increase to 8 oz.
First fruit tried with this was 2 lbs frozen mixed berry blend (blackberry/blueberry/raspberry) from Costco plus 10 oz rhubarb from my yard. All brought to about 165 for 10 min to pasteurize. |

Notes: Target yeast pitch: 379B.
Steep grains at 150F for 30 minutes.
Bring to boil, then add LME, DME, boiling hops.
Boil 45 minutes.
Add 0.5 oz. Hallertau, 0.5 oz. Czech Saaz, 1 t. Irish moss.
Boil 10 minutes.
Add 0.25 oz. Hallertau, 0.25 oz. Czech Saaz.
Boil for 5 minutes.
Cool to <= 60F, pitch.
Ferment at 47-52 F.
Transfer after one week.
At FG, start lagering at 45F, decrease to 34F over 2 weeks.
Bring to 60F for 3 days before kegging.
Alternate yeast: Wyeast 2565 Kolsch (52-62F). |
