Notes: 1/2 qt water added to grains. Brought to a boil and set aside covered. Brought 1 gal of water to boil and set aside for sparging. Boiled 1.5 gal for DME.
Followed hop and fining schedule. Added 2 gal nearly frozen water to fermenter. Gave me 5 gal total.
Transferred to glass carboy after 1 week. Then transferred back to bucket for 1 week (due to not enough equipment and 2 concurrent batches). Transferred back to glass for 2 days, then bottled. Seemed to only have a little over 4 gallons. |

Made a 2 step starter of WLP001
Brought apple juice to build and mixed in honey, brown sugar, and turbinado.
Original Instructions
This brew is an iteration of a few ciders using different grain bills (juice to honey ratios) with various yeasts.
Notes:
5lbs = 5 Gal. Apple Juice (if this is your first cider, use organic juice without potassium sorbate; it will kill the yeast and not ferment). Don't think I used maltodextrin here.
The rest of the grain bill is accurate. If a little less kick is needed, try one of the alternates below. I'm using WLP001 this time because of its tolerance for high alcohol, higher fermenting temp and because it finishes sweater (personally I prefer the dryness of the EC-1118 but then it's closer to Cyser territory).
I'm thinking ABV should be close to 10%. Also, because OG will be relatively high I'm using a starter. One could also double pitch with decent results. I've pitched one yeast pack before and still not had any problems.
Basic steps: Boil 2 gal. apple juice and add honey stirring constantly. (Honey is heavy and will sink to the bottom. It burns easily like candi syrup.) Boil juice, honey and sugar together for at least 20 minutes. Combine wort with remaining juice once temps drop to pitching levels.

Raise temperature slowly over 90 minutes to 160 f
Rest, covered, for 60 minutes
Add hops to mash just before sparging
Sparge over juniper branches until mash runs clear
Raise to 180 f, but do not boil, hold for 20 minutes
Cool to 70 F and add yeast.
Didn't sparge enough--probably start w 1 gallon, sparge with 1 gallon.
HELLA loss with that much grain. Also did not measure the foraged juniper so who knows!!!1!! |

Usage 1 - Severe intoxication or getting drunk; a very fun or enjoyable time; also used to describe something cool, hip, or fashionable;

Recipe Details:
Spice to taste: If spice flavor isn't right then add more spices to taste in secondary.
Don't make a mess: Pumpkin boil addition should be in a hop sack to keep the gunk out of the pump.
Double Bake pumpkin: Cut in half and bake @ 350F till they get soft. Let cool then remove and mash pulp, put into pyrex dish and spread about 1.5" thick. Finally rebake till it kinda starts turning dark orange/golden, about 1 hr. Vacuum seal and keep cool/freeze until ready to use.
Use pie pumpkins: I used sweet pie pumpkins. Roasted pulp weighed almost exactly half of whole pumpkins. I roasted 14 lbs of whole pumpkin to get 6 lb 10oz roasted pumpkin.
Roast the seeds: Remove seeds from pumpkin and rinse. Roast pumpkin seeds at 325 F until browned. After 10 min start mixing every 3-4 mins until browned and tasting slightly toasty. 14 lbs fresh pie pumpkin yielded 8 oz (finished) of roasted seeds. Seeds took about 30 - 45 min to roast. They were wet when starting to roast. All of the seeds go in the mash.
Heat pumpkin prior to mash: Submerge vac sealed pumpkin in strike water while water is heating up. Squeeze pumpkin every so often to distribute heat evenly in bag.
