Notes: The most important part is adding the hops after flame out.
Drop the temp. to 180f and add hops and let steep at least 30 minutes then finish cooling as normal. Transfer to secondary (keg) after 1 week in primary. Added dry hops in mesh bag and weighted down with a small glass, tied a fishing line to the end and extended outside the keg. Dry hopped for 10 days at room temperature. Racked to serving keg, filtering through a hop bag. Purged CO2 3X cooled in kegerator for 1 week. Force carbonate at 12psi for 1 week. |

| Notes: Mash at 150deg for 90 mins in 4-3/4 gals h2o. Sparge as usual, adding .3oz s.c. hops as first wort hop. Boil for 90 mins, adding hops per schedule. Chill and pitch one pack rehydrated Safeale us-05. Ferment for one week and transfer to secondary for one week. Add dry hops per schedule and let go 2 more weeks, shaking bucket to rouse hops twice (3 days in and 10 days in). Keg as usual. |

Notes: 1. Boil water to 170F deg. Turn off heat add all grains and steep for 30 minutes. Remove grains. I use a grain bag.
2. Return wort to a boil and add 6 lbs of liquid malt extract, 1# dry malt extract and 1oz of hops. Stir till dissolved. Boil for 60 mins. Add .5 tsp Irish moss in the last 10 mins of boil.
3. Turn off heat and add honey and 1oz of hops, cover let steep for 15 mins.
4. Cool and strain into a fermentor, add enough water to equal 5 gals. Add yeast. Ferment for 21 days total.
5. Add 1oz Saaz Hops after 14 days of fermentation. Leave in for seven days. |
