Notes: Yeast for batch is actually from BSI and is the Andechs strain. Got a big pitch from Grains of Wrath.
BSI Andechs Strain Specs:
Temp Range: 50 - 54
Attenuation: 72% - 74% (Prior batch with strain finished at 80%)
Flocculation: Medium
When gravity hits about 1.020, raise temp to 58 to finish out. Should finish at about 1.010
Start with RO water.

Notes: An attempt at cloning Muskoka Cream Ale, based on notes found at https://muskokabrewery.com/beer/cream-ale/ and elsewhere.
The Muskoka page indicates Crystal 40º, and they also indicate an Amber colour (~12 SRM), so the Crystal 40º content is fairly high.
The page also mentions breadiness, so I added Victory malt.
The page calls for Summit, Cascade, and Amarillo hops, but I was having trouble getting Summit so American Homebrewers Association suggests Simcoe as a substitute for Summit. So if you can't get Summit, try Simcoe instead. |

Notes: - ment to use amirillo pellets in late addition boil but put the 25 gr leaf citra in by mistake, so I chucked the 30 gr amarillo pellits in for hopback and experimented with giving them a good stir when temp doen to 82, went a bit low as a meant to do it at 90.
- used yeast starter, pitched into bowl of wert cooled to 30c, stand 5 minutes and stirred in and stand 30 min. Will this get ferm going faster?
- OG 1049. Effeciancy poor at 66%. Mash was very thick with some grains at top not emersed in water. S0, do I go back to 3/1. That woud have been 19.2, not 18.
- FG 1008. 5,4 ABV
- Dryhopped 6 days after racking to other fermentor.
- 149 gr sugar for secondary fermentation to produce 2.6 vol co2
- On bottling smells promissing and looks reasonable clear already following 6 days off yeast. |
