Start time 12 pm
Target mash temp 154, strike temp ~165. Preheated mash tun with 3.75 G of 171 deg water (5 minutes). Liquor treated with 5g of gypsum+calcium chloride, and 3 ml of lactic acid. Doughed in to achieve rest of 152, let rest for 60 minutes, stirring every 15 minutes.
While brewing we packaged the previous batch (42) of remnants. We are packaging 2.4 gallons of aged Remnants batch 2, targeting 3.35 volume of Co2 with 93 g of corn sugar added to keg. Beer was pushed with CO2 through a racking cane into purged/sealed keg with priming sugar inside. Headspace was purged after.
Vorlaufed 13 minutes, before collecting 2 G of first runnings. Sparged with 5.6 gallons of 172 deg water.
Vorlaufed 10 minutes before draining directly into kettle, pre boil volume of 7 gallons. Boiled with heat stick and ultra burner on 5, added hops at recipe times.
Rapidly cooled with copper immersion chiller to 70 deg over 30 minutes. Transferred hard through spout/hose to 6 G glass carboy. Transferred cake from Remnants (2) after shaking.
OG: 1.050

11/03/21: Krausen slowly thickening as fermentation picks up

Notes: 7/22/2021: Added 5ml lactic acid before souring to lower ph 5.2 -> 4.4ish, looking for <3.3ph
20 hours incubation @ 40C: 3.65, 40 hours: 3.43, will add 1.5ml acid at kegging
Presour grav: 1.037, OG: 1.053...refractometers don't work with soured wort maybe?
Fermentation completed in a few days, added 1kg blueberries after 1 week, let sit for a week
Kegged 8/8/21 - Good level of sour, nice dark flavor notes. Hint of blueberry comes through. All in all, a resounding success :)

Notes: Fermentation Profile: 14C for 2 days, 10C for 7 days. Then second staged to a corny keg. Increase 3C roughly every 12 hours until you get up to 20C. Leave at 20C for 2-3 days, do a gravity reading to ensure fermentation is complete before ramping down the temp 3C every 12 hours until it reaches 0-1C. Leave for 3 days before gassing/drinking. This is based on the speed lagering methods as discussed on the Brulosophy Blog.
1 pack of dry W-34/70 to 100g of DME to 1.2 litres of water (preboil). 15-20C for 12-18 hours, 3C for for 6-10 hours.
Review Added 11.4.17 - So this is the first time I used the 'speed lagering' process and I must say I'm very happy with it. I 2nd staged and did the temperature ramp up/ramp down in a sealed corny keg (no airlock). The stuff was ready to gassed and drinkable right and the end of the temperature ramp down. For this recipe I originally planned to use Saaz hops but stuffed up, turned out I didn't have any (must have got drunk again and not updated my stock list), hence the use of Hersbrucker & Halleratau in this 'Bohemian' Pilsner. The end result was a delicous varient on a traditional recipe, came out a little creamy, I served the keg at a work party to rave reviews.

Notes: Adjusting an Am wheat recipe from "Nu Home Brew & Bottles" I found on Brewer's Friend - little more hops and going with Sorachi Ace only for the super citrus/lemon influence; targeting 5% ABV and as light as I can get but still have some grain body.
Later...
Too much Sorachi Ace - this hop can be really strong lemon/lemon peel; should have balanced with something like my Semper fIPA. |
