Notes: I measure my grains in pounds, but then switch to metric for water measurement as it is more accurate with my equipment.
I learned on a video if you use 100% wheat, it has a tendency to gum up the mash. Usually about 50% wheat and 50% Barley. https://binged.it/2TE7U5y. They did a rest at 120 degrees for 20 minutes to help break down the wheat proteins. They then went to 152 degrees and let it sit for an hour.
Based on my previous batches, I increased the heat to 154 to insure the grains were at least at 152.
I made a double yeast starter to farm half of it.
I used homegrown hops that were not dried ahead of time. Based on air drying hops, about half the volume is lost from wet to dry, so I actually used 4 ounces of hops, which was the equivalent of 2 ounces of dry hops, so the recipe indicates 2 ounces. |

Notes: Prepare a 2L yeast starter. Single infusion mash at 154°F., using 1.5 qts water per pound of grain. Sparge to collect 7 gallons of wort. Add hops at beginning of 60-minute boil. Add orange peel and coriander in last 10 minutes of boil. Chill wort, pitch yeast starter, and ferment at 65°F. for one week, then transfer to secondary for two weeks. Bottle with priming sugar and condition for two weeks. Optional: serve with a slice of orange. |

Notes: Follow up to "Straight Up Pale".
The first was to develop a base beer with no dry-hopping.
The second is to up the hop profile of the base a little and then follow up with dry-hopping.
Dry hopped with Amarillo pellets in the bottom of the secondary keg before transferring from primary.
Second dry hop with Simcoe pellets in the the top of the secondary, small exposure when cap off hopefully countered with CO2 purge immediately after hop addition. Left for 3 days before bottling.
This is the third (version 2 with dry-hop). All hops in boil before primary unlike last time when I added some pellets into the fermentor before transfering the wort. First addition of dry hop pellets (Amarillo) was in secondary vessel before transferring beer. Second addition of dry hops (Simcoe & Lemon Drop) added 3 days before bottling. Total secondary was one week.
Bottle conditioning hit optimum flavour and carbonation after 4 weeks in cellar at 10 degrees celsius.

Notes: Brix showed a bit higher at 13.4 (13.0 would have matched 1.052)
But Brix was taken after putting yeast in, maybe that messed it up.
Had been fermenting at room temp, which was probably only about 10˚C, from 01/12/2016 to 06/12/2016. Then put on the heat pad until 10/12/2016. at this point 1.020. Put on the heat belt. (the mat was being used for bottle conditioning.
Bottled 13/12/2016, still on 1.020
Not sure why low attenuation. Low temp?
Bottled 28 x 500ml bottles with 5ml dissolved light muscavado from 92g. So 3.3g per bottle.
Bottled the remaining 8 bottles and the 2.4 litre jug with 1 teaspoon each. |
