Notes: This version I changed some hops and also the yeast. The yeast is not offered on this list; it is WLP -030 - Tames Valley yeast, an English Yeast. The Norther Brewer was supposed to be Nugget but I was using up resources FIFO.
Review - This beer was made for a camping trip in Indian Mountain. This was the first keg to go and was a crowd favorite. Some notes, I am glad I used an English yeast for this beer. The English yeast imparted a better more full mouthfeel. I would default to this Kentucky Common recipe from here on out as this has the most rounded qualities of any of the versions I have completed yet.

Notes: El lúpulo Apollo es muy bueno para brindar un amargor suave. Se puede sustituir por Magnum, Bravo, u otro lúpulo de esta categoría.
El lúpulo Perle brinda sabores y aromas clásicos, puede reemplazarse por otro lúpulo noble como Saaz, Sterling, etc.
Los lúpulos Calypso y Kohatu son moderadamente frutales, y se pueden sustituir por otros lúpulos de esas características, preferiblemente de Nueva Zelanda como Motueka, Wai-iti, Waimea, pero también se puede experimentar con otros lúpulos modernos.
Si no se cuenta con esta levadura, se puede usar Safale BE-134, o cualquier otra cepa de levadura de estilo saison.
Fermentar los primeros tres días a 18-20ºC, y luego dejar subir la temperatura libremente hasta unos 25ºC y esperar unas dos semanas, o cuando la densidad final esté estable. |

Notes: Collected unhopped wort and boiled for 10 minutes. Knocked out into CO2 purged HLT and pitched lactobacillus blend. 24 hours later pH dropped from 5.2 to a 3.5. Transferred blend into wort kettle, brought to boil, and hopped beer (with aged Pacifica) at specified intervals. Cooled wort and pitched Whitbread yeast starter. Let ferment for 7 days then split the batch into two separate three gallon carboys. Aged one carboy with oak chips soaked in Moscato. Aged the other carboy with tart cherries. After two months transferred into Cornelius keg and pressurized. Currently cellaring beer. |
