Changes for future brew: - Add a touch of honey malt or GP in place of 2-row for more orange-ish color - Mash higher - Add mashout step - Increase Liquor to grist ratio - Try London Ale III - Add a very small bittering charge or FWH

Ginger is sliced. OG came out to be 1.046 on my first brew in Zymatic. Bottled January 23 Plaato says started at 1.046 and ended at 1.010. Tester says 1.020. Bottled with two sugar pills per bottle, three in larger bottles. Plaato says 4.8 percent alcohol. Age in bottles for 30 days.

Additions of cinnamon and vanilla bring to mind rich cakes and cocoa. Mash in at 149° F (65° C) (1.25 quarts/lb strike water) and hold 60 minutes. Boil 90 minutes adding hops as indicated in recipe. Add turbinado and candi sugar for last 5 minutes of the boil. Add vanilla bean and cinnamon stick to the secondary and age one month.
