Looking for a coppery red color with a lighter body and a surprise boost in abv, due to the potatoes, Looking for lots of fruity spice from the Mosiac and Mt Hood , a nice balanced apre ski brew

Mash at 153F. 90 minute boil. 0 Minute boil hops get added at flameout and stand for 45 min covered. Pitch and ferment at 66F. Raise to 68F when fermentarion slows. Cold crash to 38F when fermentation is complete. Rack or push to CO2 purged dry hop vessel, bring back to room temp and add final dry hops for 3 days. (You could also split the final dry hop and add second half on day 2 for a 4 day dry hop) Rack to CO2 purged keg and force carb at 40F. Serve at 9psi and 44F.

Notes: This was definitely a fun and challenging one to make. The goal was a sour ale that gave you the feel of drinking a milkshake and I think we accomplished just that. Final gravity did finish at 1.027 so it was a nice, thick mouthfeel. Couple of things to note...
The vanilla is listed at 10 beans. We used vanilla extract from Beanilla and on their website, they have a conversion table that states 1 tbsp of the extract is equivalent to 1 vanilla bean. We used 10 tbsp of the vanilla extract.
With the dry hop, the hop varieties were ok, but not 100% complimentary to the fruit. I think I'd pull out the lotus and stick with citra and huell melon in the future. The dry hop equated to about .8oz / gal and I think I'd also drop that to maybe .5oz / gal.
When it was done, we felt it was a good fruited sour but it was no milkshake sour. So to get that milkshake feel, we backsweetened in the keg with truvia. It took about 96g of truvia per 5 gallon keg to get the sweetness level that we wanted.
Upon initial taste, your palate is hit with the sweetness from the truvia. Mid sip before you swallow, you get hit with the fruit. On the backend and after you swallow, you get the vanilla and the tartness from the lactobacillus. |

Notes: Boiled 1st Runnings 30 minutes while sparging the second runnings.
1.4M c/mL/P or 729B yeast cells. 3L yeast starter w/ 13oz DME. 8 hrs on stir plate. Starter then sat 3 days at 60*. Pitched decanted yeast.
FG:1.020. Primary Fermentation 27 Days around 60*. Then kegged and aged around 38* in keezer. Force C02 & bottle-gunned around month #6
3rd in 2017 Indiana Brewers Cup (July 2017). Plan to enter again in 2018 Indiana Brewers Cup. It also won another award in 2017 but I honestly cannot recall the competition. It's basically the "SCOTTIE MACROCKETTS" recipe from Great Fermentations store (Courtesy of Nathan Compton) except I used Golden Promise instead of Maris Otter.
Edit 5/29/18. Bottles have been cellared 13 months and they keep getting better. I try one bottle every 3-4 months. |
