Once wort is finished boiling transfer to fermenter as per usual. Keep 2 liters of wort in the kettle, and add lactic acid until ph is at 4.2. Add 1/2 oz of acidulated malt, sour to 3.6, boil for 5 mins, reduce temp to 21C and add to the fermenter when complete |
