Notes: Brewed 10/27/23, usual procedure
11/10/23: Racked to keg, split between two kegs. Gravity about 1.018, but sample ferments out to almost 1.010. Placed kegs at 65 F for diacetyl rest and increased attenuation
11/14/23: Moved kegs back to fridge at 50 F, slowly begin dropping temp, 3 f per day.

Notes: Add 8 pkg of Kroger Peach Tea powder prior to kegging. Each pack is for 1/2 gallon of tea. Didn't carb too much as it's tea. I've found that for some reason 1 yeast pack doesn't seem to finish the fermentation.
I've started now with just 2 gallons of water that I bring to 180 degrees. I cool it while I clean just enough to drop it to a low enough temp to go in my Big Mouth Bubbler. I'll then top off with tap water (I live in Memphis, our stuff is good) Super fast and easy. Brew to fermenter is under an hour.

Steep grains in 2 – 2½ gallons of water in your brew pot at 155°F for 10-15 minutes. Remove and rinse.
Immediately add (pitch) your yeast when the wort is at or below 78F (when the fermenter no longer feels warm to the touch).
If using a carboy, attach stopper and blow-off tubing and run the other end into water in a container to collect excess foam (blow-off). Make sure stopper is dry so that it creates a firm seal in the neck of the carboy. After blow-off has subsided (24-48 hours.) replace tubing with a sanitized airlock 1/2 full of water. If fermenting in a plastic bucket, attach lid and airlock 1/2 full of water.
