| Notes: This Stout was inspired by the BruSho Dry Irish Stout, but it ended up much different. I changed the Pale Malt to Maris Otter, and I replaced Carapils with Crystal 60L, then added Chocolat Malt, and Flaked Oats. The BruSho’s use of hops Magnum 15AA was too much for my taste, so I went with East Kent Goldings, using two additions. This cut the bitterness down by half or more. In all, this is quite different, but I think it’s more of a traditional Irish Stout, perhaps except for the addition of East Kent Goldings at the end. |

Not too heavy body, lot of roast-coffee-chocolate flavor. Came out better than expected.
For next batch, might add some flaked wheat (~500g) for better head retention. |

Pitch Lactobacillus Brevis Vial and cover with plastic wrap or seal tightly in boil kettle
Maintain temp at 100 F for 72 hours (or very close to it)
Re-Boil for 60 mins
Saaz or Tettanager at 30 min
Add ½ oz Sea Salt
Cool Wort to 70 F
Pitch Yeast for primary fermentation (7 days)
Transfer to secondary fermenter (7 days)
Zest 4 limes and place in 6 oz of tequila to create tincture (store 7 days)
Place 2 oz oak chips in 6 oz Tequila to create tincture (store 7 days)
Strain and Pour tincture into kegs or bottling bucket when transferring beer
