Notes: 高知酵母CEL24と高知産の麹を使用したSAKE IPA。
CEl24はカプロン酸エチル(りんご香)酢酸イソアミル(バナナ香)の生成量が多く甘酸っぱい香りのお酒が出来上がるのが特徴です。
そこにメロン、桃やマンゴーなどの核果のアロマを特徴に持つエルドラゴというホップを使用し複雑で芳醇なアロマが香る、まるでいろいろな花が爛漫に咲いている植物園にいるかのようなIPAを目指します。また麹を使用することで糖化の効率が上がり、芳醇で甘酸っぱい香りながら切れ味のあるドライな仕上がりにある予定です。
※発酵力の弱いCEL24を補助するためにIPA酵母も使用しミックスカルチャーで発酵させます。 |

Notes: 1 pumpkin for pie pumpkin baked @ 375 with brown sugar. cubed, put in strainer bag in boil
2 tsp pumpkin pie spice ( 1 tablespoon of cinnamon, 1teaspoon of ginger, 1teaspoon of nutmeg, 1/4 teaspoon of cloves.)
2018 - next time - - try 1/8 - 1/4 lb lactose as well
2019 - -ran on nitro. - foamy, but may be bc I accidentally overcarbed for this
good spice level. good flavor, but better flavor after about 4-6 weeks. good color.

The pumpkin and the spices where added at the lest 20 minutes of the boil in a hopspider bag. Squeeze the bag out before flame-out.
You can use almost any hops instead of Sybilla.
