Notes: This remarkably robust porter stands tall among the competition. Constructed of an intricate blend of caramalt, chocolate and lager malts, this deep brown beer is full bodied and rich in flavor. What can I say other than Wow. Everything was DEAD on with this. Carbonation just about blew my face off when I popped the swing-top. Real malty flavor and smell. Thick creamy chocolate head. Very light bodied and extremely easy to drink, Not as heavy as some of the Porter styles I've had in the past. Delicious.Very proud of this recipe. |

Notes: Cranberries are dried.
Honey is unfiltered Orange Blossom Honey.
Brewpot has 3 gallons water. Use 32 oz in second pot, boil, turn off heat, add cranberries and stir as it cools. Make puree and add 7.5 minutes before end of boil into main boil pot.
Add honey after flameout, let sit for 10 minutes.
Put in nutrient and enzyme just before yeast.
Ferment 4 weeks. Bottle condition for 2 weeks. |

Notes: Boil for 90 minutes to get some caramelization.
Rehydrate yeast in 5oz of water.
*About 16% of this recipe is munich malt*
Pitch yeast in half cup of 80 degree for 15 mins and leave alone, then gently stir for 15 until a cream is created.
Brewed on 06/27/15 with a full 5.75-6 gallons in the fermenter. I calculated about 7.25 on my dip stick, but after adding 4 lbs of extract it went up to 7.75, and thats why I did a late addition.
Gravity read 13.1 brix (1.051) Pitched at 66.
06/28/15: There is a TON of activity with some krausen getting pushed out. Everything looks good so far.
07/01/15: Changed temp from 66 to 68.
07/02/15: Took it out to room temp.
Kegged on 07/16/15:
Full 5 gallons. Might have sucked up a few oz of trub, but overall went ok.
Refractometer: 6.3brix (1.011 SeanTerrill) 5% Alcohol.
09/07/15: The beer has smoothed out a lot and it's quite nice. There is a strong buttery (not diacetyl) quality to the beer that I attribute to the munich malt. Overall my family likes it and I think it's good... but not great.
An all grain version will follow. |

Notes: Trying to turn out a very quick cider:
- Rehydrate one packet of Lallemand Voss in GoFerm PE as per instructions
- Pitch into ~4.6 gal of Kirkland brand apple juice @90f. Add 10-11 drops Fermcap S to reduce krausen and hopefully prevent the mess that's pretty much guaranteed to happen given the inadequate headspace I'm providing - even given I'm starting with a blowoff tube. Ramp temperature up to 96f over the next few hours.
- Just after lag phase has ended mix 7.5g Fermaid O into some apple juice until thoroughly dissolved, and add with enough juice to top up to 4.7 gal total.
- Just before the 1.3 sugar break (1.040-1.034) mix 7.5g Fermaid O into some apple juice until thoroughly dissolved, and add with enough juice to top up to 4.8 gal total.
- After ~24 hours at FG, start cold crashing.
- Rack to serving keg after 24-48 hours at cold crash temperatures, and start force carbing.
- Taste and stabilize and backsweeten or add flavoring if necessary. I have a variety of tinctures I might add to make this more interesting, depending on how things turn out.
- Drink Young, hopefully within a week or so.
Nutrient schedule is roughly cribbed from https://www.meadmakr.com/batch-buildr/, using the Fermaid O only TONSA 2.0 schedule, with high nitrogen requirements and taking into account that the Voss Kviek is (hopefully) going to blitz through the must. |

Mix 3.9kg of WW Apple Juice concentrate with 21.1L water to make up to 25L volume.
Add yeast when liquid is at pitching temp.
Allow to ferment out to 1.010.
Add 40 grams of Black Doris Plum Cider Powder.
Transfer to keg and chill to prevent any further fermentation.
Our Apple Cider is made from the highest quality apples, usually 3 types being Braeburn, Royal Gala and Jazz, depending on the season. The result is a very clean and crisp cider. The apple flavours are light and pleasant and the overall taste is refreshing. We suggest to ferment to 1.010 SG and put the cooling on to stop fermentation as this will leave some residual sweetness without making the beverage too sweet. At this SG the alcohol will be 3.85%. If you want to hit 5% at this final SG, add an extra 600 grams of dextrose at the start. If you let the yeast ferment all the way the final gravity will be about 1.006 which is an alcohol content of 4.38%. If you want to hit 5% at this final SG, add an extra 350 grams of dextrose. |
