Notes: Grain bill should probably be about 80% malt 20% adjuncts.
Most recipes Im seeing online have anywhere between 1.3lbs/gal - ~1.75 lbs/gal ratio (grain bill in lbs / post-boil water in gal). Feel like going to the higher side based on it being a double cream ale.
I feel like for this to really feel like double cream ale, we want the mouthfeel have a bit of silkiness to it. This is the inspiration for the .5lb of oats. Most sites I found said to not go past 20% of grain bill.
I dont want to go too high on the grain bill on this one b/c we have the imperial coming up.
After brewing, we decided we wanted to go up on either the corn or oat, but can't remember which. Might have been both? Probably want to cut some of the lactose sugar to compensate. Idk Im not like a professional or anything. |

Notes: For the hops, there is no option for 'dried cones', so what I have done is select pellets, but decrease the utilisation. Therefore, the weight it shows should be correct for your dried hops. To calculate the utilisation I consider that one needs roughly 5 times more wet hops compared to pellets. Then I also note that after drying your 1kg of wet hops came to ~300g of dried hops. Therefore, your utilisation is 1 / 5 * 1000 / 300 ~ 66%.
Note the LME is split in an early and late addition. Sugar is late addition. Late addition should go in with roughly 10 mins left in boil.
If you don't have any yeast nutrient or irish moss on hand, don't worry too much, they can be omitted.
Ferment is the key for this bad boy. You wanna start it around 20C, then let it naturally increase temp while its fermenting. Try and put somewhere in the house where it will stay relatively warm, and maybe wrap it in a blanket. It will probably get down to about 1.010 within the first week, then it should slowly make it's way down to ~1.005 over the next couple of weeks. Just be patient. Maybe don't chuck your tilt in this batch if you want it for others in the meantime.
I chose a dry yeast cos it's easier. I haven't used it before, but its meant to be pretty damn good. I'd rehydrate it before pitching if you can be bothered. These instructions are pretty good: https://www.homebrewersassociation.org/how-to-brew/rehydrating-dry-yeast/. If you wanted to go liquid, I'd suggest Wyeast 3711 (French Saison). |

Notes: Caramel note from steeped grains quite prominent and seems to mask the standard "extract" flavour.
Darker than I expected, but a good colour.
Slightly bitter finish - I've grown to like it, but could consider reducing the IBUs a bit next time.
Not hugely hoppy - maybe try adding even later (~1 min) or dry hopping.
Quite moreish. Yum.
Made a yeast starter (in error) a week or so before the brew, but kept in fridge & pitched cold. Fermentation was turbocharged.
Oh yeah, and the starting gravity was a little too low (too much water?), so perhaps foolishly I threw 200g of DME in after the boil. It all came out ok!
Fermented at about 20C perched up on some bricks over the edge of a tiled heated floor. |
