| Notes: Got 2 1/2 ounces homegrown hops from my sister several months ago. Went to brew it and somehow some got moldy. So I decided to improvise and throw in all the leftover hops I have from previous brews and see what happens. So a simple chinook featuring pale ale becomes a Frankenstein IPA-ish beer. |

i have used us05 and some unused lager yeast (will need proofing and starter) im thinking i might just mix the two. (update : yeast was mislabeled - was not lager but belgian, so leaving that out and just going with the us05)
have a bit of a freezer situation trying to figure out. and leaving town in 7 days. but should be able to ferment at 70 for 7 days or maybe 14. then cold condition for another 7 or 14 days. no lines open yet so could lager until one opens up.
if i get a new freezer this week though, i suppose i could just do a pilsner instead. this brew seems a little simpler, cheaper, will get to try some cluster hops, and mixing of yeasts. -rb04282017

Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5gal recipe you will need extra because of the fluid loss during the boil process
2lbs American Two Row
1lb Caramel 10
1lb Cara Pils/Dextrine
6bs Gold Malt Liquid Extract
6oz Citra – aroma
2oz Centennial – dual
2 Saflager S-23 dry lager yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Gold Malt Liquid Extract and return wort to boil
Add 2oz Citra hops and boil for 60 minutes
Add 1oz Citra hops and boil for 20 minutes
Add 1oz Citra hops and 1.5oz Centennial hops and boil for 10 minutes
Add 1oz Citra hops at flame out and whirlpool for 10 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.056
Add 2 packs of Saflager S-23 dry lager yeast
Fermentation:
Primary – 2 weeks at 64-68degrees
Secondary – 2 weeks at 50-54 degrees
Secondary – 2 weeks at 44-48 degrees
Add 1oz Citra hops and 1oz of Centennial hops to secondary 5-7 days before bottling beer
Bottle beer 5 - 7 days after last dry hop addition
Bottling:
6 weeks after brew date
Use .2oz of corn sugar per gallon of beer.

Notes: 1. Do an yeast starter 2 days before the brewing day.
2. Brewing day: crush the grains (8oz wheat malt), add 2 gal of water to your kettle and heat to 155F; add the grain bag and stir for 30 minutes.
3. Remove the kettle from burner, remove the bag, add wheat LME (6.6lb) slowly while stirring. (malt has to be completely dissolved before placing the kettle back on the burner)
4. Heat to a boil; when reaching boil add 1 oz Cascade hops (@ 60min)
5. Add Irish Moss @ 15 min
6. Sanitize the fermentor; dissolve the Blueberry Special Blend in 4 cups of water and add to the fermentor along with 2 gal of cold water
7. Cool the wort as fast as possible to 70-80F
8. Pour the wort through a sanitized funnel and strainer
9. Top up the fermentor with cold water up to 5 gal. Stir the wort and oxygenate with O2 for 30 seconds.
10. Once wort reach 68-70F, take a gravity read and pitch the yeast. Seal the fermentor.
11. Primary fermentation: 68-72F for 10-14 days (dump the trub if you are using a conical); Secondary fermentation: 1 week
12. Dry hop with 0.5oz of Cascade 1 week before kegging (day 14)
13. On the kegging day, add 4oz of Blueberry flavor to your keg before force carbonate |
