Notes: Shooting for a light summer ale. Light color, average alcohol content, light taste, very clear. Currently carbonating at 15psi at 38 degrees for a little more carbonation.
I think this is close. 1 week in the primary, 1 week in the secondary. Cold crashed for 3 days and then kegged. It's very clear but the head retention is a little weak. Will try some carapils for version 2. |

| Notes: Christmas spice extract is made by adding 2.5 oz overproof vodka to a container containing 3 cinnamon sticks, 2 vanilla beans, 1 small ginger root (sliced and roasted), 1 tsp whole clove, 1 tsp whole allspice, 1/4 tsp grated nutmeg, and 1 tbsp dried sweet orange.
